Mango Phirni

Mango phirni is a delightful and popular Indian dessert that combines the richness of phirni, a rice pudding, with the refreshing flavor of mango. Phirni itself is a traditional North Indian dessert made by slow-cooking ground rice with milk, sugar/jaggery, and various aromatic ingredients like cardamom and saffron.

INGREDIENTS

1cup-240ml; 1tablespoon – 15ml ; 1teaspoon – 5ml;

To make grinded rice:

– ½ cup raw rice

– 1 cup water to soak

To make the phirni:

– 500ml full-fat milk

– 3 green cardamom pods, ground

– 10-12 cashew nuts

– ¼ cup jaggery (gur)

– A pinch of saffron

– 1 cup mango pulp (puree) from 1 ripe mango (about 300g)

How to make mango phirni

1. Begin by washing ½ cup of raw rice and soaking it for 30 minutes. Drain the water from the rice and roughly grind the soaked rice.

2. In a saucepan, pour 500ml of full-fat milk and bring it to a boil. Add the freshly ground cardamom to the milk and mix well.

3. Add the roughly ground rice to the milk and continue boiling until the rice is cooked thoroughly.

4. Once the rice is cooked, add the cashew nuts and a pinch of saffron to the phirni mixture.

5. Next, add the jaggery (gur) to the mixture and mix until it melts completely. Turn off the heat and allow the mixture to cool.

6. Meanwhile, take a ripe mango and extract 1 cup of pulp by cutting the mango and then make a puree by blending the mango pulp.

7. Once the phirni mixture has reached room temperature, add the mango pulp and mix well. Refrigerate the mango phirni for a few more minutes to enhance its flavors.

8. Garnish the mango phirni with mango cubes, cashew nuts, and saffron strands. Serve and enjoy the delightful mango phirni.
