Air Fried Sabudana Vada

Air fried Sabudana vada is a healthier twist on the traditional deep-fried Indian snack made from tapioca pearls, also known as sago. Sabudana vada is a popular dish, especially during fasting periods or festivals in India.

Ingredients

1cup-240ml; 1tablespoon – 15ml; 1teaspoon – 5ml;

For soaking the Sabudana:

– 1/2 cup Sabudana (Sago)

– Sufficient water to soak

For the special masala (roasted and grinded):

– 1 tsp of cumin seeds

– 1 tsp of fennel seeds

– 1 tsp of black peppercorn

– 1+¼ tsp coriander seeds

– 1/8 tsp hing

– ¼ rock salt

For the Sabudana Vada:

– 1+1/2 cups Shredded and Boiled Sweet Potatoes

– Soaked Sabudana (from the above step)

– 1 tsp Freshly Roasted and Crushed Cumin Powder

– 2 tbsp Roasted and Chopped Peanuts

– 1 tbsp Chopped Coriander Leaves

– 1 piece Chopped Green Chilli

– 1 tsp Chopped Ginger

– 1/2 tsp Special Masala (You can use your preferred spice mix)

– 1 tsp Lemon Juice

– 1 tbsp Ghee (Clarified Butter)

– Salt to taste

To Grease the Vada:

– 1-2 tbsp Ghee (Clarified Butter)


How to make Air Fried Sabudana Vada

1. Rinse the Sabudana thoroughly under running water until the water runs clear. Transfer the rinsed Sabudana to a large bowl.

2. Add sufficient water to soak the Sabudana and cover it. Allow it to soak for at least 4 hours or until it becomes soft and easily mashes between your fingers.

3. In a mixing bowl, combine the soaked Sabudana, boiled and shredded sweet potatoes, roasted and crushed cumin powder, chopped peanuts, chopped coriander leaves, chopped green chilli, chopped ginger, special masala, lemon juice, and salt to taste.

4. Mix all the ingredients together until they form a uniform mixture. You can use your hands to do this, as it helps in blending the ingredients well.

5. Add 1 tbsp of ghee (clarified butter) to the mixture. This will enhance the flavor and help bind the ingredients together.

6. Mix everything well again, ensuring that the mixture is evenly combined.

7. Grease your hands with a little ghee to prevent sticking. Take a portion of the mixture and shape it into small, round/oval, or pattie-shaped vadas. You can make them as big or small as you like.

8. Place the shaped vadas in the air fryer basket, leaving some space between them to ensure even cooking.

9. Preheat your air fryer to 220°C for 5 minutes.

10. Once preheated, lightly brush the vadas with ghee. This will help them become crispy during air frying.

11. Place the basket in the air fryer and air fry the Sabudana vadas at 220°C for about 20 minutes or until they turn golden brown and crispy. You may need to flip them halfway through the cooking time to ensure even cooking.

12. Once done, remove the Sabudana vadas from the air fryer.

13. Your Air Fried Sabudana Vadas are ready to be served. They are delicious when served hot with green spicy chutney or yogurt.
