Ingredients

1cup-240ml; 1tablespoon – 15ml; 1teaspoon – 5ml;

Roasted and Grinded Masala:

– Coriander seeds – 1 tsp

– Cumin seeds – ½ tsp

– Fennel seeds – ½ tsp

– Black peppercorn – 1 tsp

– Dry red chilli – 1 piece

– Salt – ¼ tsp

Cutlet Mixture:

– Vegetable oil – 2 tbsp

– Cumin seeds – 1 tsp

– Grated carrot – ½ cup

– Grated beetroot – ½ cup

– Boiled mashed potato – 1 cup

– Ginger paste – ½ tsp

– Boiled green peas – 2 tbsp

– Roasted peanuts – 2 tbsp

– Coriander leaves – 1 tbsp

– Chopped green chilli – 1 tsp

– Chaat masala – ¼ tsp

– Sugar – 1 tsp

– Salt to taste

– Roasted and grinded masala (from above)

Maida and Water Mix:

– Maida – ¼ tbsp

– Water – ½ cup

To Coat the Cutlets:

– Breadcrumb – 1 cup

To Spray the Cutlets:

– Vegetable Oil – 1-2 tbsp


How to make Air Fried Vegetable Cutlet

1. In a pan, dry roast coriander seeds, cumin seeds, fennel seeds, black peppercorn, salt and dry red chilli until fragrant.

2. Cool and grind the roasted spices into a fine powder. Set aside.

3. Heat vegetable oil in a pan, add cumin seeds. Add grated carrot and beetroot, sauté until they are cooked but still have a crunch.

4. Add ginger paste, boiled green peas, roasted peanuts, coriander leaves, chopped green chilli, chaat masala, sugar, salt, chaat masala, the roasted and grinded masala and boiled mashed potato. Mix well.

5. Let the cutlets mixture cool properly. Take a portion of the mixture and shape it into flat cutlets or as your choice.

6. In a separate bowl, mix maida with water to form a smooth and semi-thick paste.

7. Dip each cutlet into the maida and water mix, ensuring it is coated evenly. Roll the cutlet in breadcrumbs until it’s fully coated.

8. Preheat the air fryer to 220°C (428 °F).

9. Place the coated cutlets in the air fryer basket, ensuring they are not touching each other.

10. Spray the cutlets with vegetable oil. Air fry for about 18-20 minutes or until the cutlets turn golden brown, flipping them halfway through.

11. Once done, remove the cutlets from the air fryer and let them cool for a few minutes.

12. Serve hot with your favorite chutney or sauce.
