Almond cake is a delicious dessert made primarily with almonds. It typically consists of ground almonds, sugar, eggs, and sometimes flour or other ingredients, depending on the specific recipe. Almond cakes can vary in texture and flavor, ranging from dense and moist to light and fluffy.

Serves: 4-6

Ingredients

1cup-240ml; 1tablespoon – 15ml; 1teaspoon – 5ml;

To boil the dates with milk:

– 1 cup Milk

– 6 Dates

To make the cake batter:

– 3 tbsp Powdered sugar

– 3 tbsp Jaggery powder (gur)

– 60g Butter (melted)

– 1 ¼ cup Maida (all-purpose flour)

– 3 tbsp Almond flour

– 1 tsp baking powder

– ¼ tsp baking soda

– ½ tsp Vanilla essence

– Date and milk mixture (prepared earlier)

To dust the cake:

– 2 tsp of powdered sugar

How to make almond cake

1. Preheat your oven to 180°C (350°F) and prepare a baking tin with greased oil and dusting flour. Set it aside.

2. In a small saucepan, combine the 1 cup of milk and 6 dates. Heat the mixture over medium heat until it comes to a boil. Once it starts boiling, reduce the heat to low and let it simmer for 5-10 minutes.

3. Using a blender or food processor, you can blend the boiled dates and milk mixture until smooth or mash them together using a spatula.

4. In a large mixing bowl, put a strainer and strain the date and milk mixer. Now add the powdered sugar and jaggery powder. Mix well to combine.

5. Add the melted butter to the sugar mixture and mix until creamy and well incorporated.

6. In a separate bowl, sift the maida (all-purpose flour), almond flour, baking powder, and baking soda together. Mix well.

7. Gradually add the dry ingredients, maida (all-purpose flour), almond flour, baking powder, vanilla essence and baking soda to the butter-sugar mixture, alternating with the date and milk mixture.

8. Start and end with the dry ingredients. Mix well after each addition, but avoid overmixing.

9. Add some freshly chopped almond nuts on base of the baking tin.

10. Now pour the cake batter on chopped almond nuts into that baking tin and spread it evenly.

11. Bake in the preheated oven for about 45 minutes or until a toothpick inserted into the center comes out clean.

12. Once baked, remove the cake from the oven and allow it to cool in the pan for about 15 minutes. Then, transfer it to a wire rack to cool completely.

13. Once the almond cake has cooled, you can optionally dust it with powdered sugar or frost it with your favorite frosting.

14. Slice and serve the delicious almond cake as a delightful dessert or enjoy it with a cup of tea or coffee.
