Atta Panjiri Ladoo is a delightful and traditional Indian sweet treat that combines the goodness of whole wheat flour (atta) with a variety of nuts, spices, and aromatic ingredients. It’s a popular choice during festivals, celebrations, and special occasions in India.

Ingredients
1cup-240ml; 1tablespoon – 15ml; 1teaspoon – 5ml;
For the Masala:
– 1 tsp Coriander seeds
– ½ tsp Cumin seeds
– ½ tsp Fennel seeds
For the Ladoo Mixture:
– 1 cup Atta (wheat flour)
– ¼ cup Cashew nuts
– ¼ cup Almond nuts
– 2 tbsp Watermelon seeds
– 4 pieces Cardamoms, crushed
– 1 tbsp Pumpkin seeds
– ¼ cup Dry grated Coconut
– ¼ tsp Dry ginger powder
– 1/3 cup Powdered sugar
– 1/3 cup Ghee
– 1 ½ tsp Masala mixture (from above)
How to make Atta Panjiri Ladoo
1. In a pan, dry roast the coriander seeds, cumin seeds, and fennel seeds until they release their aroma and turn slightly brown. Be cautious not to burn them.
2. Allow the roasted spices to cool, then grind them into a coarse powder. Set the masala mixture aside.
3. In a large, heavy-bottomed pan, add 3 tbsp of ghee and heat it over low-medium heat. Add the cashew nuts, almonds, watermelon seeds and crushed cardamoms to the pan. Roast them until they turn golden brown. Remove and set aside.
4. Before making the ladoo, roughly grind the roasted nuts and cardamoms.
5. In the same pan, add the wheat flour (atta). Roast it on low heat while continuously stirring. This process can take 15-20 minutes, or until the flour turns golden brown and emits a nutty aroma. Remove the roasted atta from the pan and set it aside to cool.
6. In the same pan add 1 tbsp of more ghee and add the dry grated coconut. Roast the until it turns golden brown. Remove the roasted coconut from the pan and set it aside to cool.
7. In a mixing bowl, combine the roasted atta, roughly grinded roasted nuts and cardamoms, roasted dry grated coconut, and dry ginger powder.
8. Sprinkle the 1 ½ tsp of the prepared masala, watermelon seeds, pumpkin seeds and powdered sugar over the ingredients in the mixing bowl. Mix everything thoroughly.
9. While it’s still warm, take small portions and shape them into round ladoo (balls) using your hands. Press firmly to ensure they hold their shape.
10. Place the prepared ladoo on a tray or plate and let them cool completely before storing them in an airtight container.
11. Your Atta Panjiri Ladoo is ready to be savored! They make for a delicious and nutritious treat.
