Aval Payasam is a delicious South Indian dessert made from flattened rice, which is also known as “aval” in Tamil and Malayalam. It is a popular dish prepared during festivals, special occasions, and as a sweet treat for guests.

Ingredients
1cup-240ml; 1tablespoon – 15ml; 1teaspoon – 5ml;
– 1/2 cup Roasted Aval (Poha or Flattened Rice)
– 1/4 cup Jaggery (Gur)
– 1 liter Milk
Tempering the payasam:
– 3 Green Cardamoms
– 6-8 Almonds
– 4-6 Cashew Nuts
– 15-16 Raisins (Kismis)
– 1 tablespoon Ghee
How to make Aval Payasam
1. Heat a dry, non-stick pan over medium heat. Add the 1/2 cup Aval (Poha) and roast for about 5 minutes. Stir constantly while roasting. Once done, transfer to a plate and let it cool.
2. In a deep saucepan, bring 1 liter of milk to a boil. Reduce the heat and let the milk simmer for about 15-20 minutes, stirring occasionally, until it thickens and reduces in volume.
3. Once the milk has thickened. Wash the roasted poha for twice and add it to the boiled milk and mix well.
4. Let the poha cook in milk for 15-20 minutes or until the poha is cooked properly.
5. In a small tempering pan, add the cashew nuts, green cardamoms, raisins, almonds and 1 tablespoon of ghee.
6. Heat and fry them for 2-3 minutes or until golden brown.
7. Pour this tempering mixture into the Payasam and mix well.
8. When the payasam thickens, add ¼ cup jaggery (molasses) to it and mix well until the jaggery dissolves in the milk.
9. Remove the Payasam from heat and let it cool for a while. You can serve the Payasam warm or chilled, as per your preference.
