Baked Rice Murukku

Baked Rice murukku, also known as rice chakli, is a popular South Indian snack made from rice flour. It is a crispy and savory treat that is often enjoyed with tea or coffee, especially during festivals or special occasions. INGREDIENTS

1cup-240ml; 1tablespoon – 15ml ; 1teaspoon – 5ml;

Ingredients to make 20-25 pieces of murukku

– 1 cup rice flour

– ¼ cup cow ghee (clarified butter)

– 1/8 tsp baking soda

– ½ tsp black cumin

– ¼ tsp hing (Asafoetida)

– ¼ tsp red chili powder

– ½ tsp salt

– 1 tsp sugar

– 1 cup water

How to make baked rice murukku

1. Begin by melting the cow ghee (clarified butter). You can microwave it for 10 seconds or melt it in a pan.

2. Transfer the melted ghee to a mixing bowl and add 1 tsp of sugar. Mix well until the sugar dissolves.

3. Once the sugar is dissolved, add rice flour, salt, black cumin, hing (Asafoetida), and baking soda to the bowl. Mix thoroughly using your hands until the ingredients are well combined.

4. Continue mixing until the mixture becomes pliable enough to hold its shape when pressed in your palm and then released.

5. Gradually add water, about 1 cup, little by little to the rice mixture while mixing. The batter should have a smooth, paste-like consistency. This is your murukku batter.

6. Fill a piping bag with the murukku batter, using a suitable nozzle of your choice. Pipe the batter onto a baking tray, forming round murukku or any desired shapes.

7. Preheat the oven to 180°C (350°F) and place the tray with the murukku inside. Bake for approximately 35 minutes per batch.

8. Once baked, remove the tray from the oven and allow the rice murukku to cool for about 10 minutes.

9. Now your delicious and crispy rice murukku is ready to be enjoyed as a snack with your evening tea or coffee. Serve and savor the flavors!

Note: Store the rice murukku in an airtight container to maintain its crispiness.
