Baked samosa ring is a delicious and creative variation of the traditional Indian samosa. Samosas are typically deep-fried pastries filled with a mixture of spiced potatoes, peas, and sometimes meat.

Ingredients

Ingredients for 4 samosa rings
For the Samosa Dough:
– 1 cup Maida (All-Purpose Flour)
– 2 tbsp Powdered Suji (Semolina)
– 3 tbsp Vegetable Oil
– 1/4 tsp Crushed Ajwain (Carom Seeds)
– Chilled Water (as needed)
– Salt (to taste)
For Roasting and Grinding the Samosa Masala:
– 1 tsp Black Pepper
– 1 tsp Fennel Seeds
– 1 tsp Cumin Seeds
– 1 and 1/4 tsp Coriander Seeds
– A pinch of Hing (Asafoetida)
– 1/4 tsp Salt
For Potato Masala:
– 2 cups Mashed Potatoes
– 1 tbsp Ghee or Vegetable Oil
– 1/2 tsp Chopped Ginger
– 1/2 tsp Chopped Green Chilies
– 1 tbsp Chopped Coriander Leaves
– 1 tbsp Roasted Masala (from above)
– Salt (to taste)
How to make Baked Samosa Ring
1. In a mixing bowl, combine maida, powdered Suji, crushed ajwain, and a pinch of salt.
2. Add 3 tablespoons of vegetable oil and mix well until the mixture resembles bread crumbs.
3. Gradually add chilled water and knead the dough until it’s smooth and pliable. Cover with a damp cloth and set it aside for 30 minutes.
4. Heat a pan over medium-low heat and dry roast the black pepper, fennel seeds, cumin seeds, a pinch of Hing and 1/4 teaspoon of salt and coriander seeds until they release their aroma and turn slightly brown.
5. Allow the roasted spices to cool, then grind them into a fine powder. Set the masala aside.
6. In a separate pan, heat 1 tablespoon of ghee or vegetable oil over medium heat. Add the chopped ginger and green chilies. Sauté for a minute until they become fragrant.
7. Add the mashed potatoes and cook for a few minutes, stirring to combine with the ginger and chilies.
8. Mix in the roasted masala (from step 2), chopped coriander leaves, and salt to taste. Mix them very well.
9. Remove from heat and let the potato masala cool.
10. Preheat the oven @180°C and grease a baking tray with oil or ghee.
11. Divide the rested samosa dough into 4 equal portions and roll them into balls.
12. Make a space in center of the dough ball. Fill it with potato masala and seal it properly.
13. Now roll the filled ball as like naan. Make cuts on its one side and flip it. Brush water on this side and roll it width wise. Connect the both ends to one another to make the ring.
14. Place them on greased the baking tray and brush them with oil or milk. Bake the samosa rings for 40 minutes @180°C or until golden brown.
