Baked Shakarpara

Baked Shakarpara is a popular Indian snack that’s known for its sweet and crispy texture. It’s a delightful treat often made during festivals like Diwali and Holi, as well as other special occasions and celebrations. The term “Shakarpara” is derived from two words: “Shakar,” which means sugar or sweetness, and “para,” which means layers or sheets.

Ingredients

1cup-240ml; 1tablespoon – 15ml; 1teaspoon – 5ml;

For the jaggery water:

– 1/2 cup water

– 1/3 cup Gur (jaggery)

– 1/4 tsp rock salt

For the shakarpara dough:

– 1+1/4 cup Maida (all-purpose flour), approximately 170g

– 3/4 cup Atta (whole wheat flour), approximately 100g

– 1/4 tsp roasted fennel seeds

– 1/3 cup hot ghee

– Jaggery water (prepared from the above ingredients)


How to make Baked Shakarpara

1. In a saucepan, combine 1/2 cup of water, 1/3 cup of Gur (jaggery), and 1/4 tsp of rock salt.

2. Heat the mixture over low heat, stirring until the jaggery dissolves completely. Once dissolved, remove it from heat and let it cool to room temperature. Set it aside.

3. In a large mixing bowl, combine 1 1/4 cup of Maida and 3/4 cup of Atta. Add 1/4 tsp of roasted fennel seeds for flavor.

4. Gradually add 1/3 cup of hot ghee (clarified butter) to the flour mixture. Mix well until the ghee is evenly distributed.

5. Add the cooled jaggery water prepared in step 1 into the flour mixture. Mix the ingredients together to form a smooth dough. Leave it to rest for 30 minutes.

6. Prepare a baking tray and preheat your oven to 350°F (180°C).

7. Divide the prepared dough into smaller portions and roll each portion into a ball. Take one dough ball at a time and roll it out into a thin sheet, about 1/8 inch thick.

8. Now using a knife or a cookie cutter, cut the rolled-out dough into desired shapes (squares, diamonds, or rectangles).

9. Place the cut shakarpara pieces on a baking tray lined with parchment paper, leaving some space between them.

10. Place the baking tray in the preheated oven and bake for about 20-25 minutes or until the shakarpara turns golden brown and crisp. Keep a close eye on them to prevent over-baking.

11. Remove the baked shakarpara from the oven and let them cool for at least 30 minutes.

12. Once the baked shakarpara have cooled completely, transfer them to an airtight container.

13. Your Baked Shakarpara is ready to enjoy! They make for a delicious and crispy snack that’s perfect for tea time or festive occasions.

Note: You can adjust the sweetness of the shakarpara by using more or less jaggery water as per your taste preference. Also, feel free to add a pinch of cardamom powder for extra flavor if you like.
