Banana walnut muffins are a delightful baked treat that combines the rich, sweet flavor of ripe bananas with the earthy and nutty crunch of walnuts. These muffins are a popular choice for breakfast, brunch, snacks, or even dessert due to their irresistible taste and moist texture.

Ingredients

1cup-240ml; 1tablespoon – 15ml; 1teaspoon – 5ml;

For the Muffin Batter:

– 1/4 cup roasted walnuts

– 1 medium overripe banana

– 1/2 cup powdered sugar

– 1/4 cup refined oil

– 2/3 cup milk

– 1 tsp baking powder

– 1/4 tsp baking soda

– 1 cup all-purpose flour (Maida)

For Garnishing:

– 3-4 banana slices

– 3-4 walnuts

– 2-3 tbsp brown sugar


How to make Banana Walnut Muffins

1. Begin by roasting the walnuts. Place 1/4 cup of walnuts in a preheated pan and gently roast them on low heat for 5-6 minutes.

2. Remove from the pan, allow them to cool, and then coarsely chop them. Your roasted walnuts are now prepared.

3. Let’s make the muffin batter. Take the overripe banana, cut it into small pieces, and mash it thoroughly.

4. Combine the mashed banana with the powdered sugar and refined oil in a mixing bowl. Add in the milk and stir until the mixture is well blended.

5. Incorporate the dry ingredients: all-purpose flour, baking powder, baking soda, and the coarsely crushed walnuts into the batter.

6. Mix until the batter reaches a semi-thick consistency. Add more milk if required to make the batter perfect.

7. Preheat your oven @ 180°C and prepare muffin molds or a muffin tin.

8. Fill each mold with the batter, filling them up 2/3 part of cups or molds. Place a few banana slices and walnut pieces on the surface of each muffin, and then sprinkle a touch of brown sugar over the toppings.

9. Arrange the muffin-filled molds on a baking tray and place them in the preheated oven. Bake for approximately 25-30 minutes.

10. Once the muffins are baked to perfection, remove them from the oven. They’ll be wonderfully moist and flavorful.
