– 1/4 cup (60g) Whipping cream

– 1/4 cup (50g) White sugar

– 1 + 1/2 tsp All-purpose flour

– 1 tsp Cornstarch

– 1/4 tsp Lemon Juice

– 1/2 tsp Vanilla essence

– 2 Medium eggs

– 2 tbsp Condensed milk


How to make Basque Cheesecake

1. Grease a round cake pan with butter and line it with parchment paper. Make sure the paper extends above the rim to help you lift the cheesecake later.

2. Preheat your oven to 180°C (356°F).

3. In a large mixing bowl, add the cream cheese, white sugar, all-purpose flour, corn starch, the condensed milk and whipping cream. Beat them together until smooth and creamy.

4. Add lemon juice, and vanilla essence. Mix until the batter is smooth.

5. Add the eggs one at a time, beating well after each addition. Ensure each egg is fully incorporated before adding the next.

6. Pour the batter into the prepared cake pan, ensuring it is evenly spread.

7. Place the pan in the preheated oven and bake at 180°C for 25 minutes.

8. After 25 minutes, increase the oven temperature to 190°C and bake for an additional 5 minutes. This helps achieve the characteristic burnt top of the Basque cheesecake.

9. Allow the cheesecake to cool in the pan for about 15-20 minutes. Then, transfer it to a wire rack to cool completely.

10. For the best texture and flavor, refrigerate the Basque cheesecake for a few hours or overnight before serving.
