A Burnt Cheese Tart, also known as a Basque-style Burnt Cheesecake, is a popular dessert that originated in the Basque Country of Spain. It gained international fame for its unique and rustic appearance, characterized by its beautifully burnt, caramelized top and creamy, custard-like interior.

Ingredients

1cup-240ml; 1tablespoon – 15ml; 1teaspoon – 5ml;

Ingredients for the Tart Crust:

– 1 Egg Yolk

– 1 tbsp (15gm) Fresh Cream

– 2/3 cup (80gm) All-Purpose Flour (Maida)

– 1/8 tsp (a pinch of) Salt

– 2 tbsp (25gm) Fine Sugar

– 40 gm Chilled Butter

– ¼ tsp Fresh lemon zest   

For the Cheesecake Filling:

– 80 gm Cream Cheese

– 3 tbsp Whipping Cream

– 1 tsp Condensed Milk

– 1/4 tsp Vanilla Extract

– 1/4 tsp Lemon Juice

– 2-3 tbsp Fine Sugar

– 1/2 tsp Corn Flour

– 1/2 tsp All-Purpose Flour (Maida)

– 2 Eggs


How to make Burnt Cheese Tart

For the Tart Crust:

1. In a small mixing bowl, combine the egg yolk and fresh cream. Mix well.

2. Add the all-purpose flour (Maida), a pinch of salt, lemon zest and fine sugar to the mixture. Stir until the ingredients come together to form a crumbly texture.

3. Cut the chilled butter into small cubes and add it to the mixture. Use your fingers to work the butter into the dough until it resembles coarse crumbs.

4. Here add the cream and egg mixture into it. Now gather the dough into a ball and wrap it in plastic wrap. Refrigerate it for about 30 minutes.

5. Preheat your oven to 180°C (356°F).

6. After chilling, remove the dough from the refrigerator and cut it into 6 equal pieces.

7. Press the dough into the tart pan, making sure it covers the bottom and sides evenly. Trim any excess dough.

8. Prick the tart crust with a fork to prevent it from puffing up during baking.

9. Bake the tart crust in the preheated oven at 180°C (356°F) for 15-20 minutes or until it’s lightly golden. Remove it from the oven and let it cool while you prepare the cheesecake filling.

For the Cheesecake Filling:

1. In a separate mixing bowl, combine the cream cheese, whipping cream, condensed milk, vanilla extract, lemon juice, fine sugar, corn flour, egg and all-purpose flour (Maida). Mix until smooth, silky and well combined.

2. Pour the cheesecake filling into the pre-baked tart crust.

3. Bake the tart in the preheated oven at 180°C (356°F) for an additional 15-20 minutes or until the top is set and has a beautiful burnt appearance.

4. Remove the tart from the oven and let it cool to room temperature.

5. Once cooled, refrigerate the tart for a few hours or until it’s nicely chilled and set.

6. Serve your Burnt Cheese Tart chilled and enjoy!
