Chicken Biryani is a go to choice for many nonveg lovers in India. If you have offered someone both rice and biryani. Then he or she will definitely going to choose biryani.
We Indian are very much attracted towards the biryani, mainly chicken biryani. I am no exception either.
Personally I prefer to cook Chicken Biryani than rice and chicken curry. Although I have shared several chicken recipes in my blogs, hope you will appreciate them as well.
Biryani is an all in one meal and it could be veg or non-veg. The recipe came from Persian’s kitchen to Mughal’s Kitchen and now we have so many variety of this dish all over the country.
Biryani is rich in flavor and has mouthwatering aroma of Indian spices. Here we will learn to make flavorful dum biryani.
In this biryani I am using chicken, alternatively you can use mutton or paneer.

INGREDIENTS
*1cup-240ml; *1tablespoon – 15ml ; *1teaspoon – 5ml ;
For Beresta we need
- Onion (thin slices) – 1 big size
- Oil – 3 tbsp.
For Prawn masala we need
- Chicken (Medium size) – 500gms
- Onions – 2 medium size
- Curd (dahi) – 150gms
- Coriander powder – 1 tbsp.
- Cumin powder – 1 tsp.
- Red chili powder – 1 tsp.
- Green chili – 2 pieces
- Ginger garlic paste – 1 tsp
- Turmeric powder – ½ tsp
- Keora water – 2 tbsp.
- Rose water – 2 tbsp.
- Biryani Masala – 1 tbsp.
- Potato – 2 medium size
- Eggs – 2 piece
- Raw garam masala – 2 cardamom (elichi), 2 inch cinnamon(darchini) , 4 cloves(long), 4 pepper(golmarich), 2 Bay leaves,1 javitri, 2 star anise etc.
- Ghee – 1 tbsp.
- Salt – 1 tsp
- Oil – 4 tbsp.
For making biryani rice
- Basmati rice (aged) –1 cup or 230gms
- Water – to boil the rice
- Salt – 1+1/2 tsp
- Ghee – 1 tsp
For garnishing the biryani from the top
- Milk – 1/4 cup
- Saffron (kesar) – pinch of
- Beresta – 1/4 cup

How to make Chicken Biryani
Step 1: Take the chicken pieces into a big bowl and wash it very well. For biryani always choose big pieces. Now add all the spices (salt, turmeric, red chili, coriander, cumin, oil, ginger-garlic paste) one by one into the bowl and mix them well. Finally add curd and mix it. Now put them aside for 2 hours to marinate.
Step 2: Meanwhile take rice into another bowl, wash and soak it for 30 minutes. Quality rice is most important ingredients for biryani. Long grain aged biryani rice is the perfect for any kind of biryani.
Step 3: It’s time to cut onions, potatoes and chilies. Chop 1 onion for beresta, it should be even & long slices. Roughly chopped other 2 onions and chilies. Cut the potatoes into big slice.
Step 4: Now take a fry pan put some oil and fry the onions till it become dark red in color. (This is called Beresta). Keep it aside. Add potato slices into same oil and fry them.
Step 5: At the same time boil 2 eggs and peel them. At the same time add pinch of saffron on lukewarm milk to extract its color.
Step 6: Now take another pot, pour it with water and put on the gas. Add some salt and raw garam masala (preferably roughly grinded or smashed) in it and boil it. It will absorb some flavor of the spices.
Step 7: After 2 hours, our chicken is marinated completely to cook. Take a pan add 3 tbsp. of oil into it. Now add chopped onions, fry until they are brown. After that add 1 tbsp. of ginger & garlic paste, fry it for another 1-2 minutes. Now add marinated chicken into it and mix them. Cook the chicken for 15-20 minutes on low flame with lid. Keep stirring in every 5 minutes. Now add coriander leaves & 1 tbsp. of biryani masala into the chicken and mix them, your chicken is ready.
Step 8: We will now boil the rice in parallel. Put the rice into the spice mixed hot water and cook it for around 10 minutes. Now drain the water and keep it aside. Here the trick is, rice should not be completely cooked. Turn off the gas when you think rice is 70% cooked.
Tips: Sync the time so that the step 7 and step 8 are finished together. Hot combo with rice and chicken makes it juicer.
Step 9: When chicken is ready, transfer it in a large pot which has thick base. You can brush it with Ghee or oil before putting the chicken (It enhances the flavor), now add the rice on it and spread it across evenly.
Step 10: Now top it up with beresta (Fried onion), and then add 2 tbsp. of Keora water, equal amount of rose water and all kesar milk on it. Now put a lid. Here you can use wheat dough to seal it properly.
Step 11: Now put the pot on gas (extreme low flame) or put a tawa on low gas flame and put the pot over it. Then leave like this for 15 to 20 minutes.
Tips: It works equally well in Rice cooker, use it for 5 – 7 minutes in cook mode and 30 minutes in Warm mode.
Step 12: Your Chicken Biryani is now ready to be served. Enjoy the dish with your family and if you have time then make some Raita and Salad to complete the dish.
