Kebab / Kabab is a Middle east origin cooked meat dish. Chicken Seekh Kebab is a popular variety of this dish. This dish is originally called as Shish Kebab by the Turks. Where the word ‘Shish’ means Sword and ‘Kebab’ means Roast. When the dish came to India, the name modified a little to Seekh Kebab. The word ‘Seekh’ translates to skewer in Hindi, which justifies the change in its original Turkish name. Chicken Seekh Kabab is a very popular street food in south Asian countries specially in India, Pakistan and Bangladesh.

Kebabs are very very flavorful, tasty and juicy chicken dish. Its one of my favorite choice in non veg street food.

For me, its more mouthwatering part is its grounded texture and juicy chicken. Usually I used to eat kebabs in restaurants or buy readymade kebab from market.

I was in the impression that, it is probably one of the most difficult recipes out there. Because of the sticking part, where we need to put the chicken on the stick. I was really really afraid about that particular step.

But I have gain the confidence after making the chicken meatballs. I have made the chicken balls perfectly in my first attempt. So following the same process I have also made Chicken Seekh Kebabs at the very first time.

Chicken Seekh Kebab

INGREDIENTS

1cup-240ml; 1tablespoon – 15ml ; 1teaspoon – 5ml;

  • Chicken (boneless) – 300 gm
  • Bread crumb – 1/2 cup
  • Onion – 1 medium
  • Coriander leaves – 1/4 cup
  • Mint leaves – 1/4
  • Green chilies – 3 pieces
  • Garlic cloves – 10 pieces
  • Coriander powder – 1 tsp
  • Cumin powder – 1 tsp
  • Chili flakes – 1 tsp
  • Black pepper – 1/2 tsp
  • Garam masala – 1 tsp
  • Egg – 1 large
  • Oil/Ghee – 4 tbsp.

Notes

1. To make homemade chicken keema, always go with boneless chicken meat. And then just grind the chicken by using a grinder or food processor. You will get the perfect ground meat at home.
 
2. If you don’t have sufficient time to make ground meat at home, then go for readymade chicken keema. Personally I don’t like market one, because they may preserved by chemicals.
 
3. Before making keema, try to squeeze last drop of water from the chicken. Else it may create problem during binding with the Seekh.
 
4. To get flavorful sheek kababs, try to marinate it for 4-5 hours, obviously with spices. So that chicken meat can absorb all the flavor inside it.
 
5. Use your refrigerator during the marination, This will prevent the chicken from spoiling.
 
6. Try to finely chop the ingredients, Otherwise your kabab will not stick on the stick. To do so we need a sticky fine paste of chicken.
 
7. I have chopped all my ingredients, like garlic, mint leaves, coriander leaves and green chilies with using my food processor. It helped me to get finely chopped ingredients.
 
8. Personally I prefer mustard oil to make any kind of non veg items. Its my preference. Ghee or Vegetable oil is also goes well for kababs. 
 
9. The most important part of this Chicken Sheek Kebab is its sticky chicken dough. It should not very loose or tight. Don’t use any water, incase your kebab dough is little loose. Just add little more bread crumbs to make it tight.

How to make Chicken Seekh Kebab

Step 1: First we need to make ground meat or keema by using the chicken pieces. To do so, just cut the chicken pieces into small size and put them into the grinder, blender or a food processor. After some time you can see that the chicken got grounded properly.

Tips: In case you don’t want to make it at home or not have enough time to go for it. Use readymade chicken keema.

Step 2: Similarly, finely chop or make paste of the coriander leaves, garlic cloves, mint leaves and green chilies using the same jar. Here I have put them with the keema and ground them at the same time.

Step 3: When the chicken and veggies are grounded properly, take it out in a large bowl.

Step 4: After that add all the spices, oil and bread crumbs into the chicken one by one. And finally add egg, mix them properly, here you can use your hand or a fork to do that.

Step 5: Our Chicken Seekh Kebab dough is ready for the marination. It’s time to put it above a stick / skewer to give a nice sheek kabab shape.

Step 6: Take any kind of skewer you have. I have used bamboo skewer. Before using it, I washed them under the running water.

Step 7: Now Just take little chicken dough and put above the stick to make long kababs. After putting the meat over the seekh, press it using your finger to give a nice kebab shape.

Step 8: Follow the same process for the rest of the kebabs. Once all done, just put on a lid and store it inside refrigerator for 4 hours.

Step 9: It’s time to bake our kebabs. Put the oven for preheating at 180° C in convection mode. In the other hand put all the kebabs on a baking tray and brush them with little oil or ghee.

Step 10: Put the baking tray inside the oven. Bake the Chicken Seekh Kebabs for 25 minutes. When they will done just serve them with green chutney and honey mustard sauce.
