Ingredients

1cup-240ml; 1tablespoon – 15ml; 1teaspoon – 5ml;

Ingredients:

For Soaking Dry Fruits:

– Fresh orange juice – ½ cup

– Black raisins – ¼ cup

– Brown raisins – ¼ cup

– Tutti frutti – ½ cup

To Melt Jaggery:

– Jaggery – ½ cup

– Water – 2 tbsp

For Cake Batter:

– Maida (All-purpose flour) – 1 cup

– Melted jaggery (from above)

– Vegetable oil – ½ cup

– Thick curd – 3 tbsp

– Vanilla essence – ½ tsp

– Ginger powder – ½ tsp

– Cinnamon powder – ½ tsp

– Clove powder – ¼ tsp

– Nutmeg powder – a pinch

– Chopped cashew nuts – ¼ cup

– Chopped almond nuts – ¼ cup

– Baking powder – 1 tsp

– Baking soda – ¼ tsp

– Milk (if required) – 3 tbsp

To Garnish the cake:

– whole cashew nuts – 6-8 pieces

– cherry – 6-8 [pieces

To dust the cake:

– Powdered sugar – 2 tbsp


How to make Christmas Plum Cake

1. Combine black raisins, brown raisins, and tutti frutti in a bowl. Pour fresh orange juice over the dry fruits.

2. Allow the dry fruits to soak for a week or microwave for 2 minutes to expedite the process. Set aside.

3. In a small saucepan, heat jaggery and water over low heat until the jaggery melts completely. Stir continuously to make a smooth syrup. Remove from heat and let it cool.

4. Preheat your oven to 180°C (350°F). Grease and line a cake tin with parchment paper.

* In a mixing bowl, sift maida (all-purpose flour), baking powder, and baking soda together.

5. In a separate large bowl, combine melted jaggery, vegetable oil, thick curd, vanilla essence, ginger powder, cinnamon powder, clove powder and nutmeg powder.

6. Gradually add the sifted dry ingredients to the wet ingredients, mixing well to form a smooth batter. If the batter is too thick, add 3 tablespoons of milk and mix until well combined.

7. Gently fold in the soaked dry fruits, chopped cashew nuts and chopped almonds into the cake batter.

8. Pour the batter into the prepared cake tin and smooth the top with a spatula. Garnish the top with nuts and cherry.

9. Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center comes out clean.

10. Allow the cake to cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.

11. Once cooled, dust the top with powdered sugar, slice and serve your delicious Christmas plum cake!
