Coconut Barfi

Coconut barfi is a delicious and popular sweet delicacy that originates from the Indian subcontinent. It is made primarily from freshly grated coconut, sugar, and a touch of cardamom for flavor. INGREDIENTS

1cup-240ml; 1tablespoon – 15ml ; 1teaspoon – 5ml;

To make 15-20 pieces of coconut barfi:

For the coconut paste:

– 2/3 cup fresh grated coconut

– 2 tbsp milk

– 10 cashew nuts

For the barfi:

– 3 tbsp milk

– 4 tbsp sugar

– 2 tbsp milk powder

– 3 tbsp coconut milk powder

– 1/4 tsp cardamom powder

– Coconut paste

For garnish:

– 2 tbsp chopped pistachio nuts

– 1 tsp crushed rose petals

How to make coconut barfi

1. Start by making the coconut paste. In a blender, combine the fresh grated coconut, cashew nuts, and milk. Blend until a smooth paste is formed.

2. In a saucepan, pour the milk and add the sugar and milk powder. Mix well until the sugar is dissolved. Then, add the coconut milk powder and the prepared coconut paste.

3. Cook the mixture over medium heat, stirring continuously, until it thickens and becomes dry. Add the cardamom powder and mix well. Turn off the heat and allow it to cool.

4. Grease a tray or line it with parchment paper. Transfer the cooked coconut barfi mixture onto the tray and spread it evenly.

5. Sprinkle the chopped pistachio nuts and crushed rose petals on top of the mixture. Place the tray in the refrigerator for 3-4 hours to set.

6. Once set, remove the coconut barfi from the tray onto another piece of parchment paper. Using a rolling pin, gently roll the barfi to an even thickness.

7. Cut the rolled coconut barfi into square or diamond-shaped pieces and serve.
