INGREDIENTS
1cup-240ml; 1tablespoon – 15ml ; 1teaspoon – 5ml;
Ingredients for 11 pieces of coconut cookies
Salted butter – 50gm
Powdered sugar – 4 tbsp
Coconut milk powder – 3 tbsp
Fresh grated coconut – 5 tbsp
Corn flour – 1 tsp
All-purpose flour (Maida) – 2/3 cup
Baking soda – ¼ tsp
How to make coconut cookies
1. Firstly take salted butter and powdered sugar into a mixing bowl. Mix them, until they will fluffy & creamy in texture.
2. After that add coconut milk powder into it, you can use normal milk powder instead of coconut milk powder.
3. Next we will add fresh grated coconut, corn flour, maida & baking soda into it. Mix by using your hand and make a soft dough.
4. It’s time to shape the cookies. Meanwhile preheat the oven @180°C.
5. I shaped the cookies as round. To do so, take little portion of cookie dough, round it using your two palms, then press it and your cookie is ready.
6. Use a tooth pick/skewer to make hole on cookies and they are ready to bake.
7. Now put the baking tray into the oven and bake them for 18 minutes.
8. It’s time to cool them for 10 more minutes and then you can store them in a glass jar at least for 9-10 days.
9. These Coconut cookies are ready. I used to eat them in my childhood, they are so delicious that you have to try to taste them once. Enjoy.
