Dalia Khichdi is a years old breakfast dish, which, for some reason gained popularity recently. This is a great choice for breakfast as it is tasty, healthy and gives a lot of energy to start your day.

Dalia is actually coarsely broken wheat. The size of its granules differs with brands, but its property remains more or less same.

Grains size of dalia impose a effect on its cooking style. Like smaller dalia grains are easy to cook and feels like more smooth and tasty. Its a personal preference though.

The main ingredients of Dalia Khichdi is dalia and lentils or dal. But the base taste depends on spices and the process of cooking.

Khichdi, itself a full meal, even you could count it in one pot meal. The most important thing of a khichdi is its ingredients.

Although khichdi is a meal item, Dalia khichdi is more popular as breakfast.

Personally I have some key rules for my breakfast, my breakfast should be easy to make, easy to digest, light, tasty and obviously healthy.

INGREDIENTS

*1 cup-240ml; *1 tablespoon – 15ml ; *1 teaspoon – 5ml ; 

  • Dalia / Broken wheat – 1/2 cup
  • Yellow lentils (Moong Dal) – 2 tbsp.
  • Beans (chopped) – 1/4 cup
  • Onion – 1 medium size
  • Potato – 1 medium piece
  • Carrot – 1 medium piece
  • Tomato – 1 medium size
  • Green chili – 2-3 pieces
  • Ginger paste – 1/2 tsp
  • Coriander leaves – 1/4 cup
  • Cumin seeds – 1tsp
  • Bay leaf – 1 piece
  • Dried red chili – 1 piece
  • Cumin powder – 1tsp
  • Coriander powder – 1 tbsp.
  • Sugar – 1 tsp
  • Salt – 1 tsp or as per your taste
  • Ghee / clarified butter – 1 tbsp.
  • Water – 3 cup for pressure cooker and 4 cups for normal kadai
  • oil – 1 tbsp.

Notes

1. Here I have used small grain dalia or broken wheat. I have already said that smaller dalia grains are more tasty and takes less time to cook. But larger grains also goes well for making this Dalia khichdi.
 
2. Veggies bring a unique taste and flavor into the dish. Choose your own favorite veggies to add into your khichdi. I have taken my favorite ones, you choose your preferred seasonal vegetables.
 
3. In India, you can find several dals (Lentils). Among those delicious dals, I have taken moong dal (Yellow Lentil). Moong dal is one of my favorite dal, and goes well with this recipe. You can use any other dal of your choice. 
 
4. I have done this entire recipe in a normal fry pan and pressure cooker. And I like little dry or tight khichdi, that’s why I have added 3 cups of water in the khichdi. If you prefer soupy khichdi then use 1 cup more water.
 
5. I have not used any powdered garam masala because I love the flavor of roasted ingredients, veggies, fresh coriander leaves and the smell of cow ghee in my khichdi. But if you like to add garam masala into your khichdi, you can add.
 
6. I prefer to do little dry roast of dals/lentils before adding it into the khichdi. Skipping dry roast is also fine for this recipe.
 
7. 3 liter pressure cooker is ideal to make khichdi for 2 people. If you are making for more than 2 then choose 5 liter pressure cooker. In that case use only 3 cups of water into the cooker.
 
8. Use the perfect measurement whenever you are making a dish by following a food blogger’s recipes. Measurement is the only key to make a dish as perfect as a pro.
 
9. Don’t try to open the pressure cooker lid instantly after switching off the stove. Wait for reduction of steam pressure. If you are make it in normal kadai then cover it with a lid during the cooking.

How to make Dalia Khichdi

Step 1: Firstly we need to chop all our vegetables. So chop the potato, carrot, tomato, beans, onion, green chilies, coriander leaves and chilies into small pieces.

Step 2: Now take a pan and preheat it. Then add the yellow lentils into it and dry roast for 1-2 minutes. It is a good practice to dry roast the lentils before using it for several recipes.

Step 3: Using the same pan, add 1 tbsp. of oil into pan and then add 1 tsp of cumin seed, red chili & 1-2 bay leaves. Wait for cumin seed splutter.

Step 4: At this point add chopped potato pieces into the pan. Fry the potatoes for 2-3 minutes or till it get little brown in color.

Step 5: When our potatoes are fried properly then add all veggies (carrot, beans, green chilies) one by one into the pan. Fry them for another 4-5 minutes.

Step 6: Now the veggies are fried properly. So I am going to add chopped onions and fry it for another 2-3 minutes. similarly I will add tomatoes and ginger paste into the fry pan and cook it for a minute. We need to fry all our veggies till nice brown in color, otherwise they might release raw smell in the khichdi.

Step 7: My veggies are ready. So I am going to add all spices (turmeric powder, coriander powder, cumin powder, sugar and salt), lentils and Dalia (broken wheat) into it. Roast them all for another 2 minutes. Your roasted homemade khichdi masala is ready.

Step 8: Now take 3 cups of water in a normal pressure cooker and let it be boil. Then add all the roasted spices into the pressure cooker. Wait for boiling and cover the lid of it.

Step 9: Cook for till 1 whistle on low flame. Switch off the stove and wait for 10 minutes to cool down the khichdi.

Step 10: Now open the lid of the pressure cooker, add chopped coriander and 1 tbsp. of ghee into it. Stir them gently and your Dalia Khichdi is ready to be served.
