Dalia is actually coarsely broken wheat. The size of its granules differs with brands, but its property remains more or less same.

The main ingredients of Dalia Khichdi is dalia and lentils or dal. But the base taste depends on spices and the process of cooking.

INGREDIENTS
*1 cup-240ml; *1 tablespoon – 15ml ; *1 teaspoon – 5ml ;
- Dalia / Broken wheat – 1/2 cup
- Yellow lentils (Moong Dal) – 2 tbsp.
- Beans (chopped) – 1/4 cup
- Onion – 1 medium size
- Potato – 1 medium piece
- Carrot – 1 medium piece
- Tomato – 1 medium size
- Green chili – 2-3 pieces
- Ginger paste – 1/2 tsp
- Coriander leaves – 1/4 cup
- Cumin seeds – 1tsp
- Bay leaf – 1 piece
- Dried red chili – 1 piece
- Cumin powder – 1tsp
- Coriander powder – 1 tbsp.
- Sugar – 1 tsp
- Salt – 1 tsp or as per your taste
- Ghee / clarified butter – 1 tbsp.
- Water – 3 cup for pressure cooker and 4 cups for normal kadai
- oil – 1 tbsp.

How to make Dalia Khichdi
Step 1: Firstly we need to chop all our vegetables. So chop the potato, carrot, tomato, beans, onion, green chilies, coriander leaves and chilies into small pieces.
Step 2: Now take a pan and preheat it. Then add the yellow lentils into it and dry roast for 1-2 minutes. It is a good practice to dry roast the lentils before using it for several recipes.
Step 3: Using the same pan, add 1 tbsp. of oil into pan and then add 1 tsp of cumin seed, red chili & 1-2 bay leaves. Wait for cumin seed splutter.
Step 4: At this point add chopped potato pieces into the pan. Fry the potatoes for 2-3 minutes or till it get little brown in color.
Step 5: When our potatoes are fried properly then add all veggies (carrot, beans, green chilies) one by one into the pan. Fry them for another 4-5 minutes.
Step 6: Now the veggies are fried properly. So I am going to add chopped onions and fry it for another 2-3 minutes. similarly I will add tomatoes and ginger paste into the fry pan and cook it for a minute. We need to fry all our veggies till nice brown in color, otherwise they might release raw smell in the khichdi.
Step 7: My veggies are ready. So I am going to add all spices (turmeric powder, coriander powder, cumin powder, sugar and salt), lentils and Dalia (broken wheat) into it. Roast them all for another 2 minutes. Your roasted homemade khichdi masala is ready.
Step 8: Now take 3 cups of water in a normal pressure cooker and let it be boil. Then add all the roasted spices into the pressure cooker. Wait for boiling and cover the lid of it.
Step 9: Cook for till 1 whistle on low flame. Switch off the stove and wait for 10 minutes to cool down the khichdi.
Step 10: Now open the lid of the pressure cooker, add chopped coriander and 1 tbsp. of ghee into it. Stir them gently and your Dalia Khichdi is ready to be served.
