Easy homemade biryani is a flavorful and aromatic rice dish that originated in the Indian subcontinent. It is made with a combination of basmati rice, meat (such as chicken, lamb or vegetables) along with a blend of spices, herbs, and sometimes nuts and dried fruits.
INGREDIENTS
1cup-240ml; 1tablespoon – 15ml ; 1teaspoon – 5ml;
Ingredients for 3 servings:
To soak the biryani rice:
– 1 cup biryani rice
– Water (for soaking the rice)
To marinate the chicken:
– 750g chicken (medium size)
– 1+1/2 tsp salt
– 1/2 tsp turmeric powder
– 1 tsp cumin powder
– 1+1/2 tsp coriander powder
– 1/2 tsp biryani masala
– 1/4 tsp red chilli powder
– 2 medium-sized onions, sliced
– 3-4 green chillies
– 1-inch piece of ginger
– 15-20 garlic cloves
– 2 tbsp chopped coriander leaves
– 2 tbsp chopped mint leaves
To cook the chicken:
– 3-4 tbsp mustard oil
– 3 cardamom pods
– 1-inch cinnamon stick
– 2 star-anise
– 4 cloves
– 6 black peppercorns
To cook the rice:
– Water (for boiling the rice)
– 1 tsp salt
How to make easy homemade biryani
1. Start by soaking the biryani rice. Place 1 cup of biryani rice in a bowl and add enough water to soak it. Leave it for 30 minutes to properly soak.
2. Finely chop the onions, ginger, garlic, green chillies, mint leaves, and coriander leaves using a food processor.
3. Now, it’s time to marinate the chicken. Take 750g of chicken and add salt, turmeric powder, cumin powder, coriander powder, biryani masala, red chilli powder, finely chopped onions, ginger, garlic, mint leaves, and coriander leaves. Mix well and let the chicken marinate for at least 2 hours.
4. After 2 hours, bring a pot of water to a boil for cooking the soaked rice. Once the water is boiling, add 1 tsp of salt and the soaked rice. Boil the rice until it is about 80% cooked.
5. Strain the cooked rice and set it aside.
6. Preheat a deep pan or kadai and add 3-4 tbsp of mustard oil. Add the whole spices (cardamom pods, cinnamon stick, star anise, cloves, and black peppercorns) to the oil and fry for a minute.
7. Now, add the marinated chicken to the pan and mix well. Cover the pan with a lid and cook the chicken until it releases oil and water.
8. Once the chicken is cooked, add the partially cooked rice on top of the chicken and spread it evenly.
9. If the lid of the pan has a hole, cover it with atta dough to seal it properly. Then, cover the pan with the lid and place it on a tawa (griddle). If the base of the pan is thick, you can skip using the tawa.
10. Cook the biryani on low heat for 30-40 minutes. After that switch off the gas and wait for 5-10 minutes.
11. Open the lid and mix the biryani well and serve it hot.
