Ingredients

1cup-240ml; 1tablespoon – 15ml; 1teaspoon – 5ml;

For the cake batter:

– 2 overripe bananas

– 1 cup rava (semolina)

– ½ cup jaggery (gur), grated or powdered

– ½ cup lukewarm milk

– ½ tsp vanilla extract

– 1 sachet Eno (fruit salt)

To garnish the cake:

– 2 tbsp chopped almonds


How to make eggless banana rava cake

1. Preheat your oven to 180°C (350°F). Grease a cake tin and set it aside.

2. In a mixing bowl, mash the overripe bananas until smooth and creamy.

3. Add the jaggery to the mashed bananas and mix well until the jaggery melts in it.

4. Here add rava (semolina) and lukewarm milk into the mixture and mix them well. Allow it to rest for about 5 minutes. This will help the rava absorb the moisture.

5. Add vanilla extract to the moist rava mixture and mix well to combine. Ensure there are no lumps. Cake batter is almost ready.

6. Just before pouring the batter into the greased cake tin, add the sachet of Eno (fruit salt) to the batter. Mix gently and do not overmix. The batter will become frothy.

7. Immediately pour the batter into the greased cake tin and spread it evenly.

8. Add some chopped almond on top of the cake and tap the tin to settle down the cake batter in that cake tin.

9. Place the cake tin in the preheated oven and bake for approximately 35 minutes or until a toothpick inserted into the center of the cake comes out clean.

10. Once the cake baked, remove the cake from the oven and allow it to cool in the tin for 10 minutes.

11. After 10 minutes, transfer the cake to a wire rack and let it cool completely before slicing.

12. Your delicious Eggless Banana Rava Cake is now ready to be enjoyed! Serve it as a tea-time snack or as a dessert.

Note: Baking time may vary depending on your oven, so keep an eye on the cake after 30 minutes to prevent overbaking.
