Cakes are my all time’s favorite dessert item. They are spongy, fluffy , sweet and flavorful. This Christmas, I have made lots of cakes and here is the recipe of tastiest one and that is Eggless Plum Cake.
Plum cake which is well known as fruit cake is very rich in flavor. It contains a lot of dry fruits, raisins, butter and mix spices. this mix spices make it different from the normal cakes.
It is very often for cakes that we use eggs sometimes and sometimes we do not use it in our cake. But they both are quite similar in taste. Egg doesn’t affect so much in the taste of cake but yes it affect on the fluffiness.
One of the flavoring agent, which I have used in this cake is Orange juice. I used to prefer Rum to soak the raisins, but here I have used fresh orange juice instead. And that has made a huge difference in my Eggless Plum Cake.
Trust me I couldn’t control myself after completing the baking. The smell of the soaked raisins and the orange juice was filled my entire house and it was indescribable.

INGREDIENTS
1cup-240ml; 1tablespoon – 15ml ; 1teaspoon – 5ml;
- All purpose flour – 1+1/4 cup
- Coco Powder – 2 tbsp
- Sugar/Jaggery – 2/3 cup
- Baking powder – 1 tsp
- Vanilla essence – 1 tsp
- Soaked raisin – 1/2 cup
- Mix spices – 1 tsp
- Watermelon seeds – 2 tbsp
- Cashew – 1/2 cup
- Almond – 1/2 cup
- Fruit candy – 1/4 cup
- Salt – 1/4 tsp
- Milk – 1/4 cup
- Butter – 150 gm

How to make Eggless Plum Cake
Step 1: To make the Eggless Plum Cake, first we need to make the cake batter. For this take a large bowl, and then add melted butter and jaggery into it.
Step 2: We should mix them, until the jaggery mixes properly with the butter. Use a whisk for mixing purpose, at the same time, add 1 tsp of vanilla essence into it.
Step 3: When the mixing is done, add all the dry fruits and 1/4 tsp of salt into the mixture. Try to add them one by one and mix them very well. You can see that the mixture become thicken now.
Step 4: It’s time to add all purpose flour, coco powder and baking powder in to Mixture.
Step 5: Now you can see that the mixture is very thick, so here we will add 1/4 up of milk (room temperature). Mix them all together very well.
Step 6: Our Eggless Plum Cake batter is ready to be baked. So take a baking tray and grease it with butter. Now put a butter paper on the base of the tray.
Note: This process will help the cake, not to stick on the base of the tray and come out easily after baking.
Step 7: Now pour all the cake batter into the tray and tap twice to settle down properly in that tray.
Step 8: It’s time for baking, so turn on the oven and set it for preheating at 180°C in convection mode.
Step 9: Once the preheating is done, put the cake tray inside the oven and bake it for 1 hour. Eggless Plum Cake takes more time than normal cake.
Step 10: Now our delicious and Fruity eggless Plum Cake is done. Leave it for 30 minutes for cooling down. Once the temperature is reduced, then cut it into pieces and enjoy with your friends and family.
