Ingredients

1cup-240ml; 1tablespoon – 15ml; 1teaspoon – 5ml;

Garlic Oil:

– 8-10 Garlic cloves

– 1/4 cup Vegetable oil/butter

Activating the Yeast:

– 1 cup Lukewarm water

– 1 tbsp Dry yeast

– 1 tbsp Sugar

Making the Dough:

– 2 cups Maida (All-purpose flour)

– 1/2 tsp Rock salt

– 1 tsp Sugar

– 3 tbsp Garlic oil (from earlier)

To garnish the bread:

Use garlic cloves from the oil


How to make focaccia bread

1. To prepare garlic oil, Crush the garlic cloves and place them in a small bowl.

2. Add the vegetable oil to bowl and microwave for 3-4 minutes, until the garlic is fragrant. Remove from oven and set aside to cool.

3. Activate the yeast, in a bowl, combine lukewarm water, sugar and dry yeast.  Mix and let it sit for about 10 minutes, or until it becomes frothy.

4. In a large mixing bowl, combine the all-purpose flour, salt and sugar. Add the activated yeast mixture and mix the ingredients together until a dough forms.

5. Now add 2-3 tbsp of garlic oil and mix them slowly. Form the dough into a ball and place it in a greased bowl. Cover the bowl with plastic wrap or a perfect lid. Allow the dough to ferment overnight in the refrigerator.

6. The next day, take the dough out of the refrigerator and let it come to room temperature for about 30 minutes.

7. Preheat your oven to 356°F (180°C).

8. Grease a baking pan generously with same garlic oil. Gently stretch and press the dough into the greased baking pan, making sure it reaches the corners.

9. Cover the pan with a clean cloth or plate and let the dough rise for about 20-30 minutes.

10. Once the dough has risen, use your fingers to create dimples all over the surface of the dough. Drizzle the remaining garlic oil over the dough, allowing it to pool in the dimples.

11. Add the garlic cloves from the garlic oil, on top of the bread or sprinkle coarse sea salt over the top and add fresh rosemary leaves if desired.

12. Bake in the preheated oven for about 20-25 minutes, or until the focaccia is golden brown on top.

13. Once baked, remove the focaccia from the oven and let it cool slightly before slicing and serving.
