For Buttermilk:

– 1 cup Milk

– 1½ tsp Vinegar

To Coat Tutti Frutti:

– ¼ cup Tutti Frutti

– 1 tbsp Maida (All-purpose flour)

For Cake Batter:

– 1¼ cup Maida (All-purpose flour)

– ½ cup Sugar

– Zest of 1 whole Orange

– ½ cup Vegetable Oil

– 2 tbsp Pista Nuts, chopped

– 2 tbsp Almond Nuts, chopped

– ¼ tsp Baking Soda

– 1 tsp Baking Powder

– Buttermilk (from above)

– Coated Tutti Frutti (from above)

To Garnish:

– 2 tbsp Tutti Frutti

– 1 tbsp Chopped Nuts


How to make Fruit and Nut Cake

1. Mix 1 cup of milk with 1½ tsp of vinegar. Let it sit for 5-10 minutes until it curdles. This is your homemade buttermilk.

2. Toss ¼ cup tutti frutti in 1 tsp of maida (all-purpose flour) until well coated. Set aside.

3. Preheat your oven to 180°C (350°F). Grease and flour a cake pan.

4. In a large mixing bowl, rub in the orange zest and sugar using your palm to get the orange flavor and its aroma.

5. In the same mixing bowl, combine 1¼ cups of maida, vegetable oil, chopped pista nuts, chopped almond nuts, baking soda, and baking powder.

6. Gradually add the buttermilk (prepared in step 1) and mix until smooth. Fold in the coated tutti frutti.

7. Pour the batter into the prepared cake pan. Then, garnish the top with 2 tbsp of tutti frutti and 1 tbsp of chopped nuts.

8. Bake in the preheated oven for approximately 40 minutes or until a toothpick inserted into the center comes out clean.

9. Once the cake is baked, let it cool for a few minutes.

10. Slice and serve this delicious Fruit and Nut Cake to delight your taste buds. Enjoy it with a cup of tea or coffee!
