Fruit bread is a type of sweet, enriched bread that is typically flavored with dried or candied fruits, as well as spices and sometimes nuts. It is known for its delicious, fruity, and slightly sweet taste.

Ingredients

1cup-240ml; 1tablespoon – 15ml; 1teaspoon – 5ml;

For Activating the Dry Yeast:

– 1/3 cup lukewarm water

– 1 tsp sugar

– 1/2 + 1/4 tsp (2.1gm) dry yeast

Other Ingredients for the dough:

– 3/4 cup (90 grams) all-purpose flour (Maida)

– 1-2 drops of yellow food color

– 1/4 tsp vanilla essence

– A pinch of salt (optional)

– 1 tbsp oil or butter

– 2 tbsp sugar

– 3 tbsp tutti frutti

– Activated yeast water (from the yeast activation step)


How to make Fruit Bread

1. In a small bowl, mix the lukewarm water and 1 tsp of sugar. Sprinkle the dry yeast over the water and let it sit for about 10 minutes.

2. It will become frothy and bubbly, indicating that the yeast is activated.

3. In a large mixing bowl, add the all-purpose flour (Maida) and a pinch of salt. Add the activated yeast water, yellow food color, vanilla essence, and sugar to the bowl.

4. Mix everything together to form a dough. You can use your hands or a wooden spoon to combine the ingredients. Knead the dough for about 5-7 minutes until it becomes smooth and elastic.

* Note: You may need to add a little more flour if the dough is too sticky.

5. Once the dough is ready, cover the bowl with a clean kitchen towel and let it rest for about 30-40 minutes. The dough will double in size during this time.

6. After the dough has risen, punch it down to release any air bubbles.

7. Now roll the whole dough evenly and add the tutti frutti over it. Fold it side by side to make it long 4 cm width sheet.

8. From one end of it, turn it towards the other end to make a circle. Place the bread on a greased baking tray and leave for another 30 minutes to rise.

9. Preheat your oven to 180°C (350°F).

10. Optionally, you can brush the top of the dough with a little milk or egg wash for a shiny finish.

12. Bake in the preheated oven for 20-25 minutes or until the bread is golden brown and sounds hollow when tapped.

13. Once the bread is done, remove it from the oven and let it cool in the pan for a few minutes. Then, transfer the bread to a wire rack and cover with a kitchen towel to cool completely.

Enjoy your homemade Fruit Bread once it’s cooled! You can slice it and serve with butter or jam, or use it to make delicious sandwiches.
