INGREDIENTS
1cup-240ml; 1tablespoon – 15ml ; 1teaspoon – 5ml;
- Carrot (Gajar) – 500 gm
- Milk – 500 ml
- Condensed milk – 150 gm
- Cashew (chopped) – 1/2 cup
- Raisin – 1/4 cup
- Cardamom – 5 pieces
- Ghee – 1/4 cup
- Salt – 1/4 tsp

How to Make Gajar Ka Halwa
Step 1: Firstly we need to grate the carrots, I have already mentioned that we need red carrots for the dish. So take the carrots and wash them very well.
Step 2: After that, peel them properly. We don’t need the outer part of carrots in the recipe.
Step 3: To grate the carrots use a medium size grater. Don’t wash or squeeze water from it after grating.
Step 4: Now take a preheated kadai or frypan, add 1/4 cup of ghee and wait to melt. When it melts properly, add crushed cardamom into the ghee.
Step 5: At the same time put all the chopped cashews and raisins into the ghee. Fry them for 1 minute on low flame.
Step 6: It is time to add the grated carrots into the frypan. Mix it up with the dry fruits and roast for 4-5 minutes. You can see that the volume of the grated carrots will reduce with time.
Step 7: Now carrots are roasted properly, It’s time to pour 1/2 litter of milk into the frypan or kadai. Always use room temperature milk or boiled milk into the Gajar Ka Halwa.
Tips: Your roasted carrots are very hot, so if you will use boiled milk, instantly it will start boiling together. But in case of cold milk, it will reduce the cooking temperature and some times it breaks the milk into paneer.
Step 8: Put a lid on the kadai and cook the halwa for 30 minutes on low flame. Keep stirring in between.
Step 9: When the milk is almost reduced, add 150 grams of condensed milk and salt into the halwa. Keep stirring it, else it will stick on the kadai.
Step 10: Finally our Gajar Ka Halwa is ready, switch of the stove. Here you can add one more tbsp. of ghee or serve as it is. I hope you all will love it.

Yes, milk powder can also be used. In that case dissolve it in lukewarm water before using.
Can I use khoya in the gajar ka halwa?
Definitely you can, khoya is a milk product, it has no sweetening capacity, even it is little salty in taste. If you want to include it in the dish, then you should skip the salt.
