INGREDIENTS

1cup-240ml; 1tablespoon – 15ml ; 1teaspoon – 5ml;

For soaking the dal:

– 1 cup Masoor dal (red lentils)

– Sufficient water to soak

For the cutlet mixture:

– Coarsely ground soaked masoor dal

– 1/4 cup chopped onion

– 1-2 green chillies, finely chopped

– 1 +1/2 tablespoons chopped garlic

– 1 teaspoon chopped ginger

– 1/2 teaspoon cumin seeds

– 1/4 teaspoon hing (asafoetida)

– Salt to taste

For frying:

– Oil for shallow frying


How to make Gluten-Free Masoor Dal Cutlets

1. To soak the masoor dal place it in a bowl and add enough water to cover the dal completely. Allow it to soak for 4 hours or overnight.

2. Now drain the water completely and rinse the dal thoroughly. Transfer the soaked and drained dal to a blender or food processor. Pulse a few times until you achieve a coarse texture. Do not over-grind it; you want some texture in the cutlets. Set aside.

3. To prepare the cutlet mixture, in a large mixing bowl, combine the coarsely ground dal, chopped onion, chopped green chillies, chopped garlic, chopped ginger, cumin seeds, hing, and salt to taste.

4. Mix well using your hands for at least 5-6 minutes. This will help the ingredients to blend together and make the cutlet mixer fluffy. Cutlet mixer is ready to fry.

5. Heat oil in a shallow frying pan over medium heat. Once the oil is hot, carefully place small small portions of the cutlet mixer by hand in the pan., ensuring they have enough space to cook evenly.

6. Flip the cutlets gently to avoid breaking them. Cook for about 3-4 minutes on each side or until golden brown and crispy.

7. Once done, remove the cutlets from the pan and place them on a plate lined with kitchen paper to absorb any excess oil.

8. Serve the gluten-free masoor dal cutlets hot as a snack or as a part of a meal. They can be enjoyed with mint chutney, tomato ketchup, or any other sauce of your choice.
