This particular Grill Chicken recipe has truly the taste of restaurant’s one, but I have not use any kind of market’s grill or barbeque sauce for my recipe.

INGREDIENTS

1cup-240ml; 1tablespoon – 15ml ; 1teaspoon – 5ml;

  • Chicken – 500gm 
  • Coriander powder  – 1 tbsp.
  • Cumin powder – 1 tsp
  • Garam masala powder  – ½  tsp
  • Red chili powder  – 1tbsp.
  • Ginger garlic paste – 1 tbsp.
  • Black pepper –  ½ tsp
  • Fenugreek leaves – 2 tbsp.
  • Turmeric powder – ½ tsp
  • Mustard oil – 2 tbsp.
  • Curd – ½ cup     
  • Salt – 1 tsp

Notes

1. For this recipe many of us prefer breast piece of the chicken. But any parts goes well with this dish. And if you are like me, you will surely appreciate the juicy leg pieces as well on your plate. 
 
2. Don’t choose large pieces of chicken. Always choose medium and smaller one. It absorbs more spices, thus makes it more tasty.
 
3. Food color is totally optional. It give a catchy & attractive look in your grill chicken. Instead of that you can use ½ tsp of Kashmiri red chili powder for red color. 
 
4. If you want to get the burn texture on top of the chicken pieces then do it in a grill pan. More then 30 minutes grilling will make the chicken pieces less juicy. 
 
5. 5-8 hours is good enough to marinate the chicken. If you are on tropical or sub-tropical then do keep it inside refrigerator. If you don’t have that much of time, marinate for at least 2 hours.
 
6. If you don’t have oven, use a grill pan for this recipe. It will turn out as good as oven made.
 
7. Butter is also a good option to replace the oil. Although I have used mustard oil to cook the grill chicken. You can replace it with any kind of vegetable oil.

How to make grill chicken

Step 1: Firstly we need to prepare the marinade. We are going to make that using homely ingredients.

Step 2: Now take the chicken into a large bowl. Here I have taken medium size pieces. Then add 1/2 tsp of black pepper and 1 tsp of salt into it. Allow it 15 minutes to rest.

Step 3: Meanwhile we will make the marinade. For that take a large size of bowl. Now add 1/2 cup of curd, 1 tbsp. of coriander powder, 1 tsp of cumin powder, ½ tsp of garam masala powder, 2 tbsp. of oil,1 tbsp. of ginger garlic paste, 1 tbsp. of red chili powder, 2tbsp. of fenugreek leaves, ½ tsp of turmeric powder. Mix them all together. This will be our marinade for the day.

Step 4: At this point pour the marinade into the chicken & make sure all of the chicken pieces are evenly coated. Then put them into an air tight container & keep it inside the refrigerator for at least 2 hours. Let it marinate.

Step 5: Now put them all on a grill tray.

Step 6: Then put the tray into the oven on low rack. Set it at grill mode & cook for 15 minutes.

Step 7: Now replace the low rack with a high rack. Put the tray inside the oven on high rack. Set the grill mode for another 15 minutes. During this time you can pause and flip the chicken pieces for better result.

Sweet Butter Sauce

Ingredients

1cup-240ml; 1tablespoon – 15ml ; 1teaspoon – 5ml;

  • Honey – 3 tbsp.
  • Butter – 1 tbsp.
  • Black salt – 1/4 tsp
  • Soya sauce – 1 tbsp.
  • chili flakes – 1 tsp

How to make Sweet Butter Sauce

Take all the ingredients into a small pan and boil it up to 1 to 2 minutes.

Brush the sweet butter sauce on the top of chicken pieces, or dip and eat.

How long do you cook chicken breast on the grill?

To make the grill properly, you have to cook it or grill it from the both side.

For oven, 1st grill the chicken for 10-12 minutes and then turn it over and cook for another 10-12 minutes.

In the case of grill pan, follow the same sequence.

How long chicken does take on a grill?

Less then 30 minutes is the perfect time for grilling the chicken.

So that you would get the juicy and tender chicken. Otherwise it can be dry and chewy.

Can you cook chicken under the grill?

Yes you can. To cook grill chicken I definitely prefer grill mode of oven.

It’s not mandatory to cook grill chicken at oven. You would get same grill chicken using the grill pan.

Should you cook chicken before grilling?

No, not really. But chicken should be marinated for at least 2 hours before cooking.

Do you grill chicken with lid open or closed?

Here I would suggest you to do the grilling process in open grill pan.

How do you grill chicken without drying it out?

To get juicy chicken, cover it with a aluminum foil and grill it for 1st 15 minutes.

After that grill it for another 15 minutes without aluminum foil on high rack.

This process prevents the chicken from dryness.
