Instant Gajar Ka Halwa

Instant Gajar Ka Halwa (Carrot Halwa) made in a pressure cooker is a quick and convenient way to prepare this popular Indian dessert. Gajar Ka Halwa is traditionally made by slow-cooking grated carrots in milk until they become soft and flavorful.

Ingredients

1cup-240ml; 1tablespoon – 15ml; 1teaspoon – 5ml;

– 500g Red Carrots (lal gajar), diced

– 500ml Full-fat Milk

– 3 Green Cardamom Pods, crushed

– 1/4 cup Condensed Milk

– 2 tbsp Sugar (adjust to taste)

– 1 tbsp Ghee (clarified butter)

To tempering the gajar ka halwa:

– 1 tsp of ghee (clarified butter)

– 3 tbsp Cashew Nuts, chopped

– 3 tbsp Almond Nuts, chopped


How to make Instant Gajar Ka Halwa

1. Wash and peel the carrots. Cut them into dice or small size pieces.

2. Heat the pressure cooker on medium heat. Add 1 tbsp of ghee and crushed green cardamom pods for a delightful aroma.

3. Once the ghee is hot, add the diced carrots and sauté for 2-3 minutes until they release their moisture.

4. Pour in the full-fat milk and stir well. Close the pressure cooker lid without the weight.

5. Cook on medium heat for 2 whistles. Open the lid, mash the carrots to get the desire consistency.

6. reduce the heat to low and cook for an additional 15 minutes. check if the carrots are soft and the milk has been absorbed. If needed, cook for a few more minutes to achieve the desired consistency.

7. Stir in condensed milk and sugar. Adjust the sweetness according to your taste.

8. Take 1 tsp of ghee and toss with chopped cashews and almonds with it. Reserve some for garnishing.

9. Add the tempered nuts and cook the halwa on low heat, stirring continuously until it reaches a thick, pudding-like consistency.

10. Garnish with the remaining chopped nuts and a drizzle of ghee. Serve hot.

11. Instant Gajar Ka Halwa is ready to be enjoyed. Serve it warm as is or with a scoop of vanilla ice cream for an extra treat!
