Kesar Babka Rose

Babka is a traditional Eastern European sweet bread and Kesar Babka Rose is filled with saffron (kesar) for amazing flavor and white sugar for sweetness. It has become popular in many places and is enjoyed as a dessert or sweet treat.

Ingredients

1cup-240ml; 1tablespoon – 15ml; 1teaspoon – 5ml;

For Saffron (Kesar) Sugar:

– 1/4 cup white sugar

– A pinch of saffron (kesar)

For Babka Dough:

– 1/3 cup lukewarm water

– 1/2 tsp active dry yeast

– 1 tsp white sugar

– 1 tbsp milk powder

– 1 cup all-purpose flour

– 1/4 tsp rock salt

– 1 tbsp butter

To spread over the rolled bread dough:

Unsalted butter – 15gm

To fill the baking tray (before baking):

Unsalted butter – 6 tsp


How to make Kesar Babka Rose

1. In a small bowl, combine 1/4 cup white sugar with a pinch of saffron. Mix well and let it sit for 7 days, allowing the saffron flavor to infuse into the sugar.

2. In a separate bowl, combine lukewarm water, active dry yeast, and 1 tsp white sugar. Let it sit for 5-10 minutes until the mixture becomes frothy.

3. In a large mixing bowl, combine the activated yeast mixture, milk powder, all-purpose flour, rock salt, and butter. Knead the dough until it becomes smooth and elastic.

4. Place the dough in a lightly greased bowl, cover it with a kitchen towel, and let it rise in a warm place for 1-2 hours or until doubled in size.

5. Preheat the oven to 350°F (180°C). Add 1 tsp of unsalted butter in each cupcake mould.

6. Roll out the risen dough into a rectangle on a floured surface. Spread the butter over the rolled bread dough. Spread the saffron sugar evenly over the butter.

7. Starting from one of the longer edges, tightly roll the dough into a log.

8. Cut the rolled dough in half lengthwise, exposing the layers. Place the shaped babka into a greased loaf pan.

9. Bake in the preheated oven for 25-30 minutes or until the top is golden brown.

10. Allow the Kesar Babka Rose to cool in the pan for 10 minutes before transferring it to a wire rack.

11. Once completely cool, slice and enjoy!
