Ingredients

1cup-240ml; 1tablespoon – 15ml; 1teaspoon – 5ml;

For the Cake:

– 1 medium-sized lemon (for zest and juice)

– 2 cups all-purpose flour (Maida)

– 2/3 cup granulated sugar

– 1 cup milk

– 1/2 cup vegetable oil or butter

– 1 tablespoon lemon juice

– 1/4 cup fresh cream

– 1 1/2 teaspoons baking powder

– 1/4 teaspoon baking soda

– Additional milk (if needed)

For the Lemon Icing:

– 1 tablespoon lemon juice

– 1/2 cup powdered sugar

How to make lemon cake

1. Preheat your oven to 180°C (350°F). Grease and flour a cake pan or line it with parchment paper for easy removal.

2. Start by zesting the lemon to obtain the lemon zest. Then, squeeze the lemon to extract its juice.

3. In a mixing bowl, combine the granulated sugar and lemon zest. Rub them together to release the lemon fragrance and enhance the flavor.

4. Add the vegetable oil (or butter), milk, lemon juice, and fresh cream to the sugar and lemon zest mixture. Mix everything together until well combined.

5. In a separate bowl, sift together the all-purpose flour, baking powder, and baking soda. Gradually add these dry ingredients to the wet mixture. Stir until you have a smooth batter. If the batter is too thick, you can add a bit more milk to achieve the desired consistency.

6. Pour the cake batter into the prepared cake pan.

7. Bake the lemon cake in the preheated oven for approximately 50 minutes or until a toothpick inserted into the center comes out clean, and the cake is golden brown.

8. Once baked, remove the cake from the oven and allow it to cool in the pan for about 15 minutes.

9. While the cake is cooling, prepare the lemon icing. In a small bowl, mix 1 tablespoon of lemon juice with 1/2 cup of powdered sugar until you have a smooth icing.

10. Once the cake has cooled slightly, remove it from the pan and place it on a serving plate. Drizzle the lemon icing over the top of the cake while it’s still warm, allowing it to soak in and create a sweet-tart glaze.

11. Allow the cake to cool completely before slicing and serving.
