1cup-240ml; 1tablespoon – 15ml; 1teaspoon – 5ml;

For the cookie dough:

– 50 grams salted butter, softened

– 2 1/2 tablespoons powdered sugar

– Zest of one whole lemon

– 1 cup all-purpose flour

– A pinch of rock salt

– 1/4 teaspoon baking soda

– 1/2 teaspoon lemon juice

To coat the cookies:

– ¼ cup cornstarch powder

To fill the hole in the center of the cookies:

– 3 tablespoons mango jam


How to make Lemon Jam Cookies

1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.

2. In a mixing bowl, cream together the softened salted butter and powdered sugar until light and fluffy. Add the lemon zest and mix well.

3. In a separate bowl, whisk together the all-purpose flour, rock salt, and baking soda.

4. Gradually add the dry ingredients to the butter and sugar mixture, stirring until a soft dough forms. Add the lemon juice and mix until well combined.

5. Take small portions of the dough and roll them into balls, coat them all with cornstarch powder. Place them on the prepared baking sheet, leaving some space between each.

6. Use your thumb or the back of a small spoon to make an indentation in the center of each cookie. Ensure its deep enough to hold the jam.

7. Spoon approximately ¼ teaspoon of mango jam into the indentation of each cookie.

8. Bake in the preheated oven for about 15-17 minutes or until the edges are lightly golden. Keep an eye on them to prevent over-baking.

9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

10. Once the cookies are completely cooled, serve and enjoy these delightful lemon jam cookies with a perfect balance of tartness and sweetness.
