Makhana oats cookies are a healthy and delicious snack option that combines the goodness of makhana (foxnuts) and oats. Makhana, also known as lotus seeds or foxnuts, are a popular ingredient in Indian cuisine and are known for their numerous health benefits. Oats, on the other hand, are a rich source of dietary fiber and provide several essential nutrients.

Ingredients for 15-18 pieces of cookies:
For roasting and grinding:
– Makhana (Foxnuts) – 1 cup
– Ghee (Clarified Butter) – 1 tablespoon
For Roasting and Grinding:
– Green Cardamom – 3-4 pods
– Cashew nuts – 6-8 pieces
– Almonds – 6-8 piece
– Ghee – 1 tbsp
For the Cookie Dough:
– Ghee (Clarified Butter) – ¼ cup
– Powdered Sugar – 3 tablespoons
– Roasted and Ground Makhana (from above)
– Gram Flour – 1 tablespoon
– Ground Oats – ½ cup
– Roasted and Ground Nuts and Cardamom (from above)
– Milk Powder – 1 teaspoon
– Baking Soda – ¼ teaspoon
– Milk – 3-4 tablespoons
How to make makhana oats cookies
1. Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper (if required) and set it aside.
2. Heat 1 tablespoon of ghee in a pan over medium heat. Add the makhana (foxnuts) and roast them until they become crispy and light brown. Remove from heat and let them cool.
3. In the same pan, add 1 tbsp of ghee, green cardamom pods, cashew nuts, and almonds. Roast them until they release a nice aroma and turn slightly golden. Remove from heat and let them cool.
4. Once the roasted makhana and nuts have cooled, grind them separately into a semi-powder form using a blender or food processor. Keep them aside.
5. Now in a mixing bowl, add ¼ cup of ghee and powdered sugar. Mix well until creamy and smooth.
6. Add the roasted and ground makhana, gram flour, ground oats, roasted and ground nuts and cardamom, milk powder, and baking soda to the bowl. Mix all the dry ingredients together.
7. Gradually add 3-4 tablespoons of milk to the mixture and knead it into a smooth dough. The dough should be firm and pliable but not too dry or sticky.
8. Take small portions of the dough and shape them into small, round cookies. You can flatten them slightly with your palm or use a cookie cutter to give them desired shapes.
9. Place the cookies onto the prepared baking sheet, leaving a little space between them.
10. Bake the cookies in the preheated oven for 15-18 minutes or until they turn golden brown.
11. Once baked, remove the cookies from the oven and let them cool on a wire rack.
12. Once the cookies have cooled completely, store them in an airtight container.
13. Serve and enjoy these delightful Makhana Oats Cookies as a snack or with your favorite beverage.
Note: You can adjust the sweetness of the cookies by adding more or less powdered sugar according to your preference. Additionally, feel free to add some chopped nuts or raisins to the dough for added texture and flavor.
