INGREDIENTS
1cup-240ml; 1tablespoon – 15ml ; 1teaspoon – 5ml;
Ingredients for 2 serving
For the cooked rice
Rice (Boiled)– ½ cup
Salt – 1 tsp
Water to cook the rice
For mango rice
Raw mango – ½ of a mango (1/4 cup)
Peanuts (roasted) – ¼ cup
Curry leaves – a bunch of
Mustard seeds – 1 tsp
Cumin seeds – 1 tsp
Vegetable oil – 2 tbsp
Dry red chilli – 1 piece
Salt to taste
Sugar – 1 tsp
Turmeric powder – a pinch of
Cooked rice
How to make mango rice
1 Firstly we need to cook the rice. Take water in a cookware, add 1 tsp salt in it & let it boil. Now wash ½ cup of boiled rice and put it into the boiling water. Cook the rice up to 90%.
2 Now drain the water from the rice and keep it aside.
3. It’s time to make the mango masala. Add oil in a preheated pan, then add cumin seeds, dry red chilli & mustard seeds. Let them splatter.
4. Here we will add curry leaves, roasted peanuts, fry for a while. Then add sugar, salt to taste and pinch of turmeric powder.
5. It is time to add the raw mango pulp. I have used ½ slice of a raw mango, grated it finely.
6. After that, mix the raw mango with all the spices and then add the cooked rice into it and mix them well.
7. your summer special mango rice is ready. It’s tangy, little bit of sweet in taste & perfect for your lunch. Enjoy
