INGREDIENTS

1cup-240ml; 1tablespoon – 15ml ; 1teaspoon – 5ml;

  • Paneer – 200gm
  • Green peas (hara matar) – 1cup
  • Onion (chopped) – 1cup
  • Tomato (chopped) – 2/3 cup
  • Ginger-garlic paste – 1 tbsp.
  • Coriander leaves – 1/4 cup
  • Fenugreek leaves – 2 tbsp.
  • Coriander powder – 1tbsp.
  • Cumin powder – 1 tsp
  • Red chili powder – 1/2 tsp
  • Kasmiri red chili powder – 1tbsp.
  • Garam masala – 1/2 tsp
  • Turmeric powder – 1/2 tsp
  • Water – 1cup
  • Sugar – 1+1/2 tbsp.
  • Salt – 1 tbsp.
  • Oil/butter – 2 tbsp.

Notes

1. Always prefer malai paneer to make any paneer recipe. Malai paneer is more delicious and softer then normal paneer. Similarly you can use homemade paneer into your dish. That will be the best way to cook homemade food.
 
2. If you are not comfortable with onion then skip it. In that case use few cashew nuts to make your gravy thicker. Don’t replace cashew by peanuts. Peanut has its own smell, which would not go well with the recipe. 
 
3. Don’t over fry peas, only mix them into the gravy. Here one more thing I would say that if you are using fresh green peas then boil them before using into the gravy. On the other hand if you are using frozen peas. They needn’t require to boil, we can use directly into the recipe. 
 
4. Yellow color in food is a natural appetizer, and turmeric is a very useful spice for health. I have used 1/2 tsp of turmeric powder here. But if you want your matar paneer white in color then skip it.
 
5. Always add the cream at the last stage of the cooking. Don’t cook fresh cream for long time. Otherwise it will break.
 
6. If you don’t have fresh cream at you home then use 1/2 cup of milk into your gravy. You will get the same texture as fresh cream in your dish. In that case use the milk 5 minutes before completing the recipe.
 
7. In addition, here is a tip to make your paneer softer for long. For this marinate the paneer with lemon, salt and fry them for 2-3 minutes. Then use them into your gravy and boil for 2-3 minutes.
 
8. If you are going to marinate the paneer with lemon juice then skip the milk and use only fresh cream.
 
 
9. Don’t skip the blending (make a paste using the roasted spices) step. Only that step make the matar paneer more thick and flavorful.

How to make Matar Paneer

Step 1: Firstly dice the paneer into large cube pieces or make them as you want. We not going to fry them so skip the marination process.

Step 2: Similarly chop the onion and coriander leaves. We will paste the roasted masala/spices, so finely chop is not necessary for the recipe.

Step 3: Now add 2tbsp. of oil in a fry pan. Then add 1/2 tsp of cumin seeds. Wait for the crackling of cumin seeds. Then add chopped onions into the pan. Fry the onions for 3-4 minutes or till brown in color.

Step 4: At this stage, add 1 tsp of ginger garlic paste and roast them for 1 minute. Then add the tomatoes on it. Fry for another 1-2 minutes.

Step 5: In that stage add all the spices ( coriander powder, cumin powder, turmeric, red chili , sugar, salt ) on it. Roast them all for another 1 minutes. Now let it cool.

Step 6: Now make a paste of that roasted spices. For this use your mixer and also you can add 2 tbsp. of water during the make paste.

Tips: Here is a trick to make you gravy more thick and creamy. Put 3-4 cube of paneer at the blending jar and make it a paste with the same roasted spices or masala. It makes the gravy more creamy and delicious.

Step 7: Pour the paste of spices in the same pan and roast it for 2 minutes on low flame. At this point add 1/4 cup of water and cook it for another 1 minute.

Step 8: At this point add the paneer cube and green peas into the pan and mix them very well.

Step 9: After that add rest of the water (2/3 cup) into the pan and wait for boiling. When it starts boiling put a lid on it and cook for 5 minutes on low flame.

Step 10: At this point add chopped coriander leaves, crushed fenugreek leaves and 1/4 cup of fresh cream. Mix them all well. Your Matar Paneer is ready to be served. Enjoy this with soft and hot roti or paratha.
