millet khichdi

Millet khichdi is a delicious breakfast dish. Usually khichdi is a mix of rice and dal. But not in my dictionary, I love my khichdi with lots of veggies & spices.

When I don’t have sufficient time to prepare my lunch, then khichdi is the best option for me to cook.

But I prefer this Millet Khichdi in my breakfast. This is heavy, healthy and good food to start my day.

However it takes less time but it has sufficient nutrition to make us healthy and fit. Khichdi is a one pot recipe, it means you can make it only using only the pressure cooker.

But personally, I prefer to use proper roasted veggies into my khichdi. So I have roasted the veggies by using a fry pan and cook the khichdi into a pressure cooker.

Each and every part of India have their own traditional style of khichdi. Mostly  people make their khichdi only using the rice and dal (Lentil).

Notes

1. Here I have used regular millet. It gets cooked in 3-4 whistles of a regular pressure cooker.

2. For Khichdi recipe, I prefer to add lots of veggies into it. It is totally optional. If don’t like veggies in your khichdi then skip them.

3. I have taken lentil (masoor dal), it goes best for this recipe. However you can replace it by any other dals.

4. I like little dry khichdi. Therefore I have added 3 cups of water. If you prefer soupy khichdi then use 1 cup more water.

5. Garam masala is also an optional ingredient. But I don’t like it into my khichdi. I love the flavor of raw ingredients and the smell of ghee in my khichdi. But if you like to add garam masala into your khichdi, you can add.

6. Most importantly I do roast of my rice and dal before the cooking the khichdi. It helps to cook them properly.
