Mint Chicken is very light and tasty chicken dish. It contains juicy and tender chicken pieces and light and healthy gravy. So if you are a chicken lover and can’t take spiciness. Then it is perfect for you.
Mint Chicken which is popularly known as pudina chicken in India is a really delicious dish. You can feel the aroma and taste of the fresh ingredients in this dish.
Whenever I feel low and need energy but also not in mood to eat any spicy food, I prefer this chicken dish.
Even you can have it as a healthy soup, for that use 3-4 cups of more water and use small pieces of chicken.
Trust me, if you are going to make this first time, you are going to fall in love for this dish. So try it once to get the taste of fresh mint and coriander leaves.
I have discovered this recipe accidentally. One day I was cooking chicken for a trial of a new biryani recipe and that time I had tasted the chicken masala which I had made for the biryani. And it was so tasty and aromatic.
So I have decided that I am going to make this a separate normal chicken curry.
First time when I made this, it came out awesome and very tasty. After that I have included this recipe in my regular menu and decided a name for it. That’s Mint Chicken.
I don’t know that how many people knew about this recipe and also made it at their own kitchen.
INGREDIENTS
1cup-240ml; 1tablespoon – 15ml ; 1teaspoon – 5ml;
- Chicken – 500 gm
- Mint leaves – 1/2 cup
- Coriander leaves – 1/2 cup
- Green chilies – 4 pieces
- Onion – 4 medium size
- Potato – 1 big size
- Curd/Yogurt – 1/4 cup
- Cumin powder – 1 tsp
- Coriander powder – 1 tbsp.
- Ginger & garlic paste – 1 tbsp.
- Turmeric powder – 1 tsp
- Water – 2 cup
- Sugar – 1 tsp
- Salt – 1 tbsp.
- Oil – 3 tbsp.
- Raw garam masala – 1 bay leaf, 2 cardamoms, 1 inch cinnamon, 4 cloves and 4 black pepper etc.

How to make Mint Chicken
Step 1: Firstly we need to chop the veggies, like potatoes, onions, mint leaves, coriander leaves and green chilies. Cut a potato into 4 slices. Similarly finely chop the onions and green chilies. And unevenly crush the coriander and mint leaves.
Step 2: Now take the chicken in a big bowl, wash it properly. We don’t need extra water in our chicken. So squeeze each and every chicken pieces to drain the water from it.
Step 3: Then add all the spices (salt, coriander powder, cumin powder, turmeric powder, ) one by one in the same bowl. And finally add mint leaves, coriander leaves and curd or yogurt on top of it.
Step 4: Now it’s time to mix them all together. Use your finger to mix them and cover with a plate. Let it marinate for 1 hour. You can put the bowl inside a refrigerator(If it’s hot summer) as well.
Step 5: It’s cooking time. So take a pan or kadai, preheat it and put 3 tbsp. of oil into it. When oil starts smoking then add the potatoes and fry them into brown in color. Take them out on a plate.
Step 6: Into the same oil and kadai add all the raw garam masala (1 bay leaf, 2 cardamom, 1 inch cinnamon, 4 cloves and 4 black pepper) into the oil and fry them for 1/2 minute.
Step 7: Now add the chopped onions into the oil and fry them for 4-5 minutes or until brown in color. When it get brown color, add 1 tbsp. of ginger garlic paste and chopped green chilies into it. Roast the masala for 1-2 minutes on low flame.
Tips: Whenever we put ginger paste or ginger & garlic paste into the hot oil, it starts spluttering. So add a pinch of salt at the same time, it helps to reduce the effect.
Step 8: It’s time to add marinated chicken into the roasted spices or masala. Coat the chicken properly with spices and cook it for 20 minutes on low flame before adding the water. During this cooking time use a lid to cover the fry pan. Give a stir in every 3-4 minutes.
Step 9: After completing that 20 minutes, we can see that the oil comes out on top and side of the chicken. That’s the sign of proper roasted chicken. Now add the fried potatoes and mix them with the chicken. At this stage we will add 2 cups of water into the chicken. Mix them and wait for boiling.
Step 10: When it starts boiling cover the lid and let it be for 15 minutes to cook. You can adjust the gravy according to your requirement.
Step 11: Your Mint Chicken is ready. I am not adding any extra masala or garam masala powder at the end. I prefer to have my Mint Chicken as it is.
