Dal (Lentil) is very regular food item for Indians. There are couple of varieties of dals available in market, and hundreds of ways to prepare them. One amazing recipe with dal is Mixed Vegetable Dal. This dal contains goodness of vitamins along with protein.

Mix Vegetable Dal is mainly made from moong dal or yellow split green gram. Apart from that you can add your favorite vegetables, here I have added mine.

According to my research Mixed Vegetable Dal is belong to Bengali cuisine, but everyone love it. My mother used to make this dal in winter season, when there are a lot of vegetables available in market.

My mother is a great cook, her vegetable dal has a unique taste, which I couldn’t make. I have learnt lots of things from her, and trying to implement them in my cooking journey.

Although we can find each and every vegetables in all over the years, yet there is a huge taste difference. Seasonal veggies have their own taste and smell. Below has the step by step recipe of the dish.

INGREDIENTS

*1cup_250ml, *1tbsp._Tablespoon(15 ml) , *1tsp._Teaspoon(5 ml)

  • Moong Dal (Split Green Gram) – 1/2 cup
  • Cauliflower (small bunch) – 1/4 cup
  • Carrot (chopped) – 1/4 cup
  • Green peas – 1/4 cup
  • Coriander leaves – 1/4 cup
  • Ginger paste – 1 tsp
  • Cashew – 10 pieces
  • Resin – 10 pieces
  • Cumin seeds – 1 tsp
  • Bay leaves – 1 piece
  • Dried red chili – 1 piece
  • Cumin powder – 1/2 tsp
  • Sugar – 1+1/2 tsp
  • Salt – 1/2 tsp
  • Water – 2 cup
  • Ghee – 1 tbsp.
  • Raw garam masala (mention below)

Notes

1. Some of dals need to be fried before cooking it. Some of those are Moong dal, toor dal and mix dal. If you skip the frying process then your dal will be sticky.
 
2. Although I have mentioned that you can choose you own vegetable for the recipe, yet you can’t add some of vegetables like beetroot, reddish, cabbage and potatoes. 
 
3. Don’t boil the vegetable with dal before roasting them. Else their raw smell will spoil the taste of the mixed vegetable dal.
 
4. Choose either vegetable oil or ghee. Don’t need to use both of them.
 
5. I prefer ghee more then vegetable oil. Cow ghee has lots of health benefits and a beautiful aroma. It helps to prevent dryness of our skin and good digestion and many more. So we should include 1 tsp of ghee in our daily diet. 
 
6. This vegetable dal is little sweet in taste and that the reason I have added cashew and resin into my list. They give a balance in taste into the dish.

How to make mixed vegetable dal

Step 1: First we need to chop the vegetables according to our requirement. We need small pieces, so chop them in that size. Similarly finely chop the coriander leaves.

Step 2: Take a preheated frypan, add 1/4 cup of moong dal into it. Now dry roast the dal for 2-3 minutes or until getting a smell of it.

Tips: Be careful, Don’t wait to turn its color from yellow to brown or red. Else your dal will be hard, after cooking for long time.

Step 3: Using the same frypan and add ghee into it. When smoke comes out from the ghee, add cumin seeds, bay leaves and one dries red chili. Wait for the spluttering of the cumin seeds.

Step 4: Once done, add cauliflower and fry them for 4-5 minutes on low flame. Keep stirring in between.

Step 5: When the cauliflower gets brown, add chopped carrots into the fry pan. Fry them for another 3-4 minutes.

Step 6: At this point add green peas, cashew, resins and 1 tsp of ginger paste into the fried veggies. Mix them all and roast for another 1-2 minutes.

Step 7: It is time to add the roasted moong dal into it. Here we will add salt, turmeric powder, coriander powder and sugar. Mix them all together.

Step 8: Parallelly take 2 cup of water in a normal pressure cooker and wait for boiling. When water starts boiling add the roasted mixture into it and put the lid on.

Step 9: Cook it up 2 whistle and then switch off the stove. When its pressure is released fully, then put off the lid and add chopped coriander leaves in it. Mix them properly.

Step 10: Finally our delicious and hot Mixed Vegetable Dal is ready to be served. Try this with hot rice and ghee or chapati and paratha.
