INGREDIENTS

1cup-240ml; 1tablespoon – 15ml ; 1teaspoon – 5ml;

Ingredients for 6 muffins:

For the muffin batter:

– 1/2 cup of yogurt (curd)

– 1/3 cup of sugar

– 1/4 cup of vegetable oil

– 1 cup of all-purpose flour (maida)

– 1 teaspoon of baking powder

– 1/8 teaspoon of baking soda

– 1/2 teaspoon of butterscotch extract

For the tutti frutti coating:

– 1/4 cup of tutti frutti

– 1 tablespoon of all-purpose flour (maida)

For the buttercream:

– 75g of unsalted butter

– 6-8 tablespoons of powdered sugar

For garnish:

– Sugar sprinkles

How to make Moist Butterscotch Muffins

1. Begin by preparing the muffin cups. Cut square pieces of butter paper or parchment paper and fold each corner towards the center, making 2cm cuts.

2. In a mixing bowl, combine curd and sugar. Mix until the sugar is fully dissolved.

3. Add vegetable oil to the mixture and mix well. Alternatively, you can use butter or ghee instead of oil.

4. Next, add all-purpose flour, baking powder, baking soda, and butterscotch extract to the bowl. Stir until the ingredients are well combined, creating a slightly thick batter.

5. Take a plate and mix 1 tablespoon of all-purpose flour with 1/4 cup of tutti frutti. Add this mixture to the muffin batter and gently fold it in.

6. Place the prepared muffin cups on a baking tray and divide the batter equally among them. Preheat your oven to 180°C (350°F) while doing this.

7. Bake the muffins in the preheated oven for approximately 35 minutes.

8. Once baked, allow the moist butterscotch muffins to cool for about 30 minutes.

9. For added flavor and decoration, prepare the buttercream. In a bowl, beat the unsalted butter until fluffy. Gradually add powdered sugar in three batches, mixing well after each addition. Finally, incorporate 1/2 teaspoon of butterscotch extract to the buttercream. Your buttercream is now ready.

10. Enhance the appeal of the muffins by piping the prepared buttercream onto them using a piping nozzle and bag. Optionally, you can also sprinkle sugar sprinkles on top.
