Ingredients
1cup-240ml; 1tablespoon – 15ml; 1teaspoon – 5ml;
– 1/4 cup Gobindobhog rice
– 1 liter of normal milk
– 1+1/2 tablespoons of chopped cashew nuts
– 1+1/2 tablespoons of chopped almonds
– 1 tablespoon of chopped raisins (kismis)
– 2 cardamom pods
– 1/4 cup of Nolen Gur (jaggery)
– 1-2 tablespoons of ghee
How to make Nolen Gurer Payesh
1. Wash the Gobindobhog rice and drain the water and set the rice aside.
2. Crush the cardamom pods to remove the seeds and grind the seeds into a fine powder. This will enhance the flavor of your payesh.
3. In a heavy-bottomed pan, bring the milk to a boil and then reduce the heat to a simmer. Stir occasionally to prevent the milk from sticking to the bottom of the pan.
4. Add the swashed rice to the simmering milk. Cook the rice in the milk, stirring occasionally, until the rice is soft and the milk thickens. This may take about 25-30 minutes.
5. Once the rice is cooked and the milk has thickened, add the cardamom, chopped cashew nuts, almonds, and raisins. Mix well.
6. Add the Nolen Gur to the rice and milk mixture. Stir well to combine. The jaggery will sweeten the payesh and give it a lovely caramel flavor.
7. Continue to cook the payesh for another 5 minutes, allowing the jaggery to melt and incorporate into the pudding. Keep stirring to ensure it doesn’t stick to the bottom of the pan.
8. Once the payesh has reached your desired consistency (it will thicken as it cools), remove it from the heat.
9. Let the Nolen Gurer Payesh cool to room temperature before serving.
10. You can serve it warm or chilled, garnished with some more chopped nuts and raisins if desired.
