Puri is very common breakfast items for North and East Indian people. It’s primarily made with all purpose flour or wheat flour. But today I am going I will add a delicious twist in it, I call it Palak Puri.
We often see puris stuffed with different items, we usually call it Kachori. Now mixing ingredients into wheat and frying is relatively a new idea. I have tried to do this with different other veggies, only Palak Puri came out delicious.
My regular readers know as of now that I love to do experiment with recipes, and once I am and my family is satisfied with the result I write those down as a recipe. This is one of those successful experiment.
Puri soaks up little oil during frying, so it is often considered as less healthier choice than many foods. I prefer health than taste. If you are not comfortable with deep frying, you can choose to shallow fry also, but the result will not be as good as this one.
Here is the complete recipe.
INGREDIENTS
1cup-240ml; 1tablespoon – 15ml ; 1teaspoon – 5ml;
Ingredients for making the dough
- Wheat flour (Atta) – 1 cup
- Palak / spinach – 150 gm
- Coriander seeds – 1 tsp
- Cumin seeds – 1 tsp
- Fennel seeds – 1 tsp
- Sugar – 1 tbsp.
- Chili flakes – 1/2 tsp (optional)
- Oil – 1 tbsp
- Salt – as per your requirement
For frying the palak puri
- Oil – for deep frying

- Deep Frying Pan or Kadai
- Mixer grinder
- Medium Saucepan

How to make Palak Puri
Step 1: Firstly, take the spinach or palak and wash it very well. After that cut the stem part from the leaves. We need only the leaves part.
Step 2: Now take a saucepan and pour 1/3 of water into it. Put it on a stove and wait for boiling. When the water starts boiling add the palak leaves into it and cook for 5 minutes.
Step 3: After that, drain the water and wash under the normal water. Then squeeze the spinach to remove the last drop of water. Now blend it into a spinach or palak puree.
Step 4: Now take a big bowl or a plate, add wheat flour, grinded masala (roasted coriander, fennel and cumin seeds), salt, sugar and palak puree into the plate. Add required water to make it a perfect dough.
Step 5: Finally add 1 tbsp of oil and mix it up with the entire dough. Try to make little tight dough, it will be easy to roll up.
Step 6: Now divide the dough into 9 equal pieces of balls. To make standard size of puri, give them a nice round shape.
Step 7: In that stage put a plastic wrapper on the rolling board and grease the rolling pin with oil. Then take one ball and give it a round puri shape. Follow the same process to roll them all.
Step 8: Now put the kadai on a stove and add oil for deep frying. When smoke comes out from the oil, it means your oil is ready for the puri frying.
Step 9: So add one puri and fry it from the both sides. Do the same thing for rest of the palak puries.
Step 10: Hot, crispy and tasty palak puri is ready to be served. So served it with curry and sweets to your family.
