If you are a vegetarian, then paneer, chickpea and soybean are some of the very popular source of necessary Protein. And this particular recipe has all of them. So it is a protein packed dish.
Plant and milk based proteins are absorbed better in our body. So If you are a non vegetarian or following a high protein diet, then this dish is a really good choice for you.
This recipe does not need any Onion or Garlic, so it is a good choice for Indian vegetarians as well.
Here is the recipe for the simple and nutritious dish.
INGREDIENTS
*1cup – 250ml; *1tbsp. – Tablespoon; *1tsp. – Teaspoon;
- Paneer – 200 gm
- Soybean (mini) – 1/4 cup
- Chickpea – 1/4 cup
- Carrot – 1 medium
- Tomato – 1 big size
- Cumin seeds – 1/2 tsp
- Coriander powder – 1tbsp.
- Cumin powder – 1 tsp
- Turmeric powder – 1/2 tsp
- Red chili powder – 1 tsp
- Fenugreek leaves – 2 tbsp.
- Milk or – 1/2 cup or fresh cream – 1/4 cup
- Water – 1 cup
- Sugar – 1 tsp
- Salt – 1 tsp
- Oil – 1 tbsp.
- Ghee – 1 tsp

How to make Paneer Mix Veg
Step 1: Firstly we need to chop carrot and tomatoes into small pieces. And also cut the paneer into medium to small sizes.
Step 2: Now take a fry pan and add 2 cups of water into it. When it starts boiling add 1/4 cup soybean into the water and cover it by a lid.
Step 3: similarly take a pressure cooker add 2 cups of water and let it boil. Then add soaked chickpea into the water and add 1/2 tsp of salt (optional) and put on the lid tightly. Cook them for 4-5 whistle on low flame of stove.
Step 4: All ingredients are ready. Squeeze each and every water drop from the soybeans and put them on a plate. Similarly drain the water from the chickpeas.
step 5: Now add 1 tbsp. of oil into a preheated fry pan and add 1/2 of cumin seeds in it. Wait for splutter. Then add chopped carrots and cook them for 3-4 minutes and then add chopped tomatoes.
Tips: Even you can boil the chopped carrots earlier to save some time.
Step 6: After that add chickpeas and roast them for 2-3 minutes. Here we will add boiled soybeans and paneer into the fry pan. Roast them all for another 3-4 minutes on low flame.
Step 7: Here we will add all spices (Cumin powder, Coriander powder, turmeric powder, ) one by one into the pan. Mix them all together and roast them for another 2 minutes.
Step 8: Now it is time to add water into the pan. Wait for boiling the water and cover the lid and cook it for 10 minutes on low flame.
Step 9: After 5 minutes, add 1/2 of milk and stir it well. Now cover the lid and cook it for another 5 minutes.
Step 10: Our Paneer Mix Veg is completed, add crushed fenugreek leaves and 1 tsp of ghee. Mix them gently and serve it with Indian roti, hot naan or paratha.

Yes you can use onion in this recipe. But I would suggest you to use chopped onion, fry them with the spices.
