Patishapta Pitha is a traditional Bengali dessert that is often prepared during the festival of Makar Sankranti, which marks the end of winter and the beginning of longer days.

Ingredients

1cup-240ml; 1tablespoon – 15ml; 1teaspoon – 5ml;

Coconut Stuffing:

– 150 gm Fresh Grated Coconut

– 1/3 cup Jaggery (Gur)

– 2 Cardamom pods

– 2 tsp Milk Powder

– 2 tbsp Water

Patishapta Batter:

– 1 cup Rice Flour

– 1/4 cup Powdered Sugar

– 1/2 cup Maida (All-purpose flour)

– 1/4 cup Suji (Semolina)

– 500 ml Milk

– Salt to taste


How to make Patishapta Pitha

1. In a pan, combine grated coconut, jaggery, and water. Cook on medium heat until the jaggery melts and the mixture thickens.

2. Add milk powder and crushed cardamom pods, mix well. Cook for an additional 2-3 minutes until the mixture reaches a thick consistency. Remove from heat and let it cool.

3. In a mixing bowl, combine rice flour, powdered sugar, maida, suji, and a pinch of salt.

4. Gradually add milk while stirring continuously to avoid lumps. Mix until you get a smooth, lump-free batter. Let the batter rest for about 30-40 minutes.

5. Heat a non-stick pan or a patishapta mold over medium heat. Grease it lightly with ghee or oil.

6. Pour a ladleful of the batter and spread it evenly in a circular motion to form a thin pancake. Cook until the edges start to lift, and the surface becomes set.

7. Place a spoonful of the prepared coconut stuffing along one side of the pancake. Gently fold the other side over the stuffing to form a semi-circular shape. Press the edges to seal the patishapta.

8. Remove from the pan and place the patishapta on a serving plate. Repeat the process for the remaining batter and stuffing.

9. Serve the delicious Patishapta Pitha warm, and enjoy this traditional Bengali sweet during the festive season!
