For all Biryani lovers out there, Biryani is the most tasty dish all over the world. Today I am going to share a different kind of biryani recipe and that’s Prawn Biryani. Its a good Bengali twist that is becoming very popular in eastern India.

Here the recipe name itself contains prawns, so it’s petty obvious that it made with prawns. And I love Prawns😋.

Biryani is an all in one meal and it could be veg or non-veg. Like Chicken Biryani, Mutton Biryani, Paneer Biryani, Egg Biryani etc.

The recipe came from Persian’s kitchen to Mughal’s Kitchen and now we have so many variety of this dish all over the country.

Biryani is rich in flavor and also has mouthwatering aroma of Indian spices. Each and every spices has their own taste and aroma, and they all together make the dish complete.

In this Biryani I am using prawns, alternatively you can use mutton, chicken or paneer.

Prawn biryani

INGREDIENTS:

1cup-240ml; 1tablespoon – 15ml ; 1teaspoon – 5ml;

For Beresta we need

  • Onion (thin slices) – 1 big size
  • Oil – 3 tbsp.

For Prawn masala we need

  • Prawns (Medium size) – 500gms
  • Onions – 2 medium size
  • Curd (dahi) – 150gms
  • Coriander powder – 1 tbsp.
  • Cumin powder – 1 tsp.
  • Red chili powder – 1 tsp.
  • Green chili – 2 pieces
  • Ginger garlic paste – 1 tsp
  • Turmeric powder – ½ tsp
  • Keora water – 2 tbsp.
  • Rose water – 2 tbsp.
  • Biryani Masala – 1 tbsp.
  • Coriander leaves – 1/4 cup
  • Mint leaves – 1/4 cup
  • Potato – 2 medium size
  • Raw garam masala – 2 cardamom (elichi), 2 inch cinnamon(darchini) , 4 cloves(long), 4 pepper(golmarich), 2 Bay leaves,1 javitri, star anise etc.
  • Ghee – 1 tbsp.
  • Salt – 1 tsp
  • Oil – 4 tbsp.

For making biryani rice

  • Basmati rice (aged) –1 cup or 230gms
  • Water – to boil the rice
  • Salt – 1+1/2 tsp
  • Ghee – 1 tsp

For garnishing the biryani from the top

  • Coriander leaves (chopped) – 1/8 cup
  • Mint leaves – 1/8 cup
  • Beresta – 1/4 cup

Notes

1. To make prawns Biryani, always choose medium to large size of prawns. They have a particular taste which balance and also enhance the taste of our Biryani.
 
2. I personally prefer raw garam masala into my recipe. They contain more flavor and aroma than the powdered garam masala.
 
3. To get the perfect aroma and flavor of raw garam masala, fry them into oil. It helps to get out all the flavor into the oil and when you will make your dish using this oil, it will absorb the flavor of the all masala/spices.
 
4. The secret ingredient of Biryani, which make the biryani more tasty and fluffy is rice. Rice is the main key of a perfect biryani. If your rice is not cooked properly or over cooked. Then you can’t make your biryani perfectly.
 
5. Always choose right rice for making biryani. Choose long grain aged basmati rice to make biryani. Whenever you will go to buy the rice, read the packet name properly before buying it.
 
6. Meetha Attar or sweet attar is a essence which help the biryani to get the authentic biryani flavor. It’s not necessity, if you want you can skip it.
 
7. Don’t fry the prawns before using them into the recipe. Otherwise your prawns will be stiff and chewy.
 
8. Don’t skip the mint leaves. Without it you will not get the actual flavor of the biryani, which I made and shared the recipe here.

How to make Prawn Biryani

Step 1: Take the peeled prawns into a big bowl and wash them very well. For biryani always choose medium size prawns.  Now add all the spices (salt, turmeric, red chili, coriander, cumin, oil, coriander and mint leaves) one by one into the bowl and mix them well. Finally add curd and mix it. Now put them aside for 1 hour to marinate.

Step 2: Meanwhile take rice into another bowl, wash and soak it for 30 minutes. Rice is most important ingredients for biryani. Long grain aged biryani rice is the perfect for any kind of biryani.

Step 3: It’s time to cut onions, coriander leaves, mint leaves and chilies. Chop 1 onion for beresta, it should be even & long slices. Roughly chop other 2 onions.

Step 4: Now take a fry pan put some oil and fry the onions till it become dark red in color. (This is called Beresta). Keep it aside. We need them at the last step of the recipe.

Step 5: After 1 hour our prawns is marinated completely to cook. This 1 hour helps the prawns to soak all the flavor into it.

Step 6: Now take a pan add 3 tbsp. of oil into it. Now add chopped onions, fry until it is brown. After that add 1 tsp. of ginger & garlic paste, fry it for another 1-2 minutes.

Step 7: Now add marinated prawns into it and mix them. Cook the prawns for 5- 10 minutes on low flame. Keep stirring in every 2 minutes. Our prawns are ready for the biryani.

Step 8: We will now boil the rice in parallel.  Put the rice into the spice mixed hot water and cook it for around 10 minutes. Now drain the water and keep it aside. Here the trick is, rice should not be completely cooked turn off the gas when you think rice is 70% cooked.

Tips : Sync the time so that the Step 7 and Step 8 are finished together. Hot combo with rice and chicken makes it juicer.

Step 9: When prawns will ready transfer it in a large pot which has thick base. You can brush it with Ghee or oil before putting the prawns (It enhances the flavor), now add the rice on top of it and spread it evenly. Here add little biryani masala on top of the rice.

Step 10: Now top it up with beresta (Fried onion), chopped coriander leaves, mint leaves and then add 2 tbsp. of Keora water, equal amount of rose water on it. Now put a lid. Here you can use wheat dough to seal it properly.

Step 11: It’s time to put the pot on stove (extreme low flame) or put a tawa on low flame and put the pot over it. Then leave like this for 15 to 20 minutes.

Tips: It works equally well in Rice cooker. For rice cooker, Put the pot inside the cooker and set it for 5 – 7 minutes in cook mode and 30 minutes in Warm mode. That’s it, Your Prawns Biryani will be ready.

Step 12: Your dum Prawn Biryani is now ready to be served. Enjoy the dish with your family and if you have time then make some Raita and Salad to complete the dish.
